Iranian Green Bean Rice (Lubia Polo)

Lubia polo لوبیا پلو as we say in Farsi, is another popular Iranian rice dish. Lubia/loobia لوبیا is green bean in Farsi. This rice dish is full of colour, flavour, COMFORT and veryyyyyyyy YUMMY meal for whole family. It is  a beautiful combination of rice with fresh green beans, diced or ground meat, tomato paste and aromatic spices.

Ingredients

3 cups rice
200 g diced meat
200 g green beans
2 large onions
1 large potato or tortilla bread for bottom of the pot (tahdig)

7 medium tomatoes, grated

2tbsp tomato paste

1tsp turmeric

1tbsp steamed saffron water

1/2 tsp cinnamon

1/2 tsp cumin

1/3 tsp nutmeg

salt and pepper to taste

butter/ vegetable oil

Method

wash the rice. Soak the rice in salted water (1tbsp salt) for 1 hour befor cooking.

Finely chop onions. In a pot with water add one of chopped onion and meat. Let to cook until tender and soft.

Chop green beans to small pieces. Heat the oil in a pan and add chopped beans. Fry to 10 minutes. Set aside. Grate fresh tomatoes and set aside. Heat the oil and saute second chopped onion until soft, then stir in all spices, fry for 2 minutes more. Add grated tomatoes, tomato paste to the onion. Allow to fry for few minutes. Add fried green beans, Saffron and cooked  meat to the sauce. Mix all together and remove it to a plate.
Bring it to a boil. Drain salted water of rice and  add rice to boiled water. Let it cook for 10 minutes . Then drain the semi cooked rice in a colander and pour some tap water over the rice. Mix rice with the sauce.
Cut a large potato into thin slices. Pour 4-6 tbsp oil in the pot, and cover bottom of pot with a slices of potatoes ( or if you do not like potatoes, cover bottom of pot with a layer of tortilla  bread). Place  rice with prepared sauce in several alternating layers. Sprinkle 3tbsp vegetable oil all over.
Simmer the rice for 20-30 minutes. Serve it with pickled vegetables/ salads or plain yogurt.

لوبیا پلو

لوبیا پلو یکی دیگر از غذاهای لذیذ و پرطرفدار ایرانی هست. این غذا پر از رنگ- عطر و طعم می باشد که از ترکیب لوبیا سبز با گوشت خورشتی ( گوشت چرخ کرده) – رب گوجه فرنگی و ادویه های خوش عطرتهیه میشود.

مواد لازم

سه پیمانه برنج

دویست گرم گوشت خورشتی

دویست گرم لوبیا سبز خرد شده

دو عدد پیاز درشت

هفت عدد گوجه‌فرنگی متوسط رنده شده

دو ق غ رب گوجه فرنگی

یک ق غ زعفران دم کرده

یک ق چ زردچوبه

نصف ق چ دارچین

نصف ق چ زیره

یک سوم ق چ جوز هندی

نمک و فلفل به میزان لازم

کره – روغن گیاهی

سیب زمینی ویا نان لواش برای ته دیگ

طرز تهیه

گوشت را خرد کرده و آبپزکنید و به کناری بگذارید. پیاز را خرد و در روغن تفت بدهید. وقتی پیاز کمی نرم شد ادویه ها را اضافه کنید. گوجه فرنگی ها را رنده کرده وهمراه با رب گوجه فرنگی به پیاز در حال سرخ شدن اضافه کنید.لوبیاهای خرد شده را به مدت 10 دقیقه سرخ نمایید و همراه با گوشت آبپز شده و آبگوشت به سس موجوداضافه کنید. مواد را خوب مخلوط کرده و در یک قابلمه بریزید.در این مرحله زعفران را اضافه کنید( معمولن زعفران در مراحل آخر پخت به غذا اضافه میشود تا عطر وطعم خود را حفظ کند. برنح را طبق معمول آبکش کنید . سیب زمینی ها را پوست کنده و حلقه حلقه کنید و روی آنها مقداری نمک و زیره بپاشید.می توانید برای ته دیگ هم سیب زمینی هم نان داشته باشید. مقداری کره و روغن را در قابلمه ریخته وقتی داغ شد سیب زمینی ها ونان را ته قابلمه قرار دهید. مقداری از برنج آبکش شده را ته قابلمه ریخته و از سس آماده شده روی برنج بریزید و به آرامی با هم مخلوط کنید. دوباره یک مقدار برنج سفید و یک لایه سس. برنج را دم کنید. لوبیا پلو را می توان با سالاد شیرازی – ترشی یا ماست سرو کرد. نوش جان

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
