Persian Apple-Apricot Lamb Stew

One of the most delicious and aromatic dishes for welcoming Autumn and Winter is apple-apricot stew خورش سیب و قیسی

This stew is terrific, full of flavour and colorful. It’s made with tangy apples, sweet dried apricot, meat (lamb/ beef or chicken) and spices.. Just delicious. This fruity and warming stew served with steamed rice.

Ingredients
300 g boneless lamb meat, washed and cubed
1 cup of dried apricot, cut into half
2 large apples, peeled off, chop into small pieces
3 medium onions
2tbs of Saffron water
3tbs of flaked almonds
1/4 tsp ground cinnamon or one cinnamon stick
Salt – pepper for taste
1/2 tsp turmeric
Olive oil

Preparation
In a pot add meat, one chopped onion and eonugh water. Cook over medium heat until meat is soft and tender . If there is left some meat juice, you could save it for adding to stew. Once meat is cooked, set it aside. In a pan add olive oil, and two sliced onions, saute until soft. Then add cooked meat and saute for 5 minutes, and stir occasionally.

Next, Add turmeric, cinnamon, saffron water to the onion and season with salt and peppr. Gently mix all ingredients together. Fry it for couple of minutes. then add apple and apricot pieces, saved meat juice or 1 cup of warm water. Cover the pot with a lid and simmer 15 minutes. Once it is cooked, garnish the stew with flaked almonds and serve it with rice.

خورش سیب قیسی

این خورشت فوق العاده لذید – معطر و خوشرنگ یکی از غذاهای قدیمی ایرانی هست و با سیب و قیسی – و گوشت ( گوساله – گوسفند ویا مرغ ) تهیه میشه. وفقط میشه با کلمه ی لذید تعریفش کرد.

این خورش را با کته/پلو سرو میکنند.

مواد لازم

سیصد گرم گوشت خورشتی

یک پیمانه قیسی خشک خرد شده

دو عدد سیب بزرگ خرد شده

دو عدد پیاز خلالی خرد شده

دو ق غ زعفران دم کشیده

سه ق غ بادام ورقه‌ای

یک چهارم ق چ دارچین

نصف ق چ زردچوبه

یک ق غ ادویه پلویی

نمک و فلفل به میزان نیاز

روغن زیتون به میزان لازم

طرز تهیه

گوشت خورشتی را آبپز نمایید تا زمانیکه گوشت بسیار نرم پخته شود. اگر از آب گوشت باقی ماند برای اضافه کردن به خورشت استفاده نمایید. در یک ماهی تابه 3 ق غ روغن زیتون ریخته و پیاز خرد شده را اضافه کنید و کمی تفت دهید تا نرم شود. سپس گوشت پخته شده را به پیازها اضافه کرده و 5 دقیقه ی دیگر تفات دهید.

ادویه هارا ( نمک – فلفل – زردچوبه ) – زعفران و دارچین را به مواد داخل ماهی تابه اضافه نمایید .مواد را با هم مخلوط کرده و اجازه دهید 3-2 دقیقه ی دیگر بپزد. سپس سیب ها و قیسی های خرد شده را به همراه آب گوشت یا اگر آبگوشت نیست 1 فنجان آب به خورشت اضافه کرده – در قابلمه را بگذارید و اجازه دهید برای 15 دقیقه با حرارت کم پخته شود.

برنج را با 1 ق غ ادویه پلویی – نمک و روغن و آب مخلوط کرده و کته را بپزید.

در زمان سرو خورشت روی آن بادام ورقه ای بریزید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.     1. I am not sure what is the name of the recipe you mentioned but this is not that sweet dessert like a cake. It has mild savoury taste and serves with rice. I hope it makes sense. 🙂
