Yatimcheh (Little Orphan)

Yatimcheh یتیمچه , literally means little orphan as in original recipe there is no meat among the ingredients, but nowadays in some recipes it has meat. This is one of the traditional meals in Iran, and from one region to another region, ingredients might be different but all called ‘ Yatimcheh‘ or little orphan.

There are different types of yatimcheh, like: eggplant yatimchehیتمچه بادمجان, zucchini yatimcheh یتیمچه کدو or potato yatichehیتیمچه سیب زمینی, that i am going to introduce it. In following recipe there are potatoes, onions, tomatoes, meat balls along with aromatic and warm spices.

Yatimcheh, is very simple, colourful and yummy dish. It serves with flat naan bread. It is not necessary to spend lots of money for making a scrumptious food, you can create such a comfort and delicious dish with cheap ingredients but tastes like 5 stars hotel meal. And yatimcheh is one of those foods: Inexpensive and Delicious.

Ingredietns

  • 200 g ground beef/lamb
  • 3 tomato, chopped
  • 3 large potatoes, peeled and cut into cubes
  • 2 onions, skin off and chop
  • 4 cloves of garlic, cut into slices
  • 1 tbs tomato paste
  • 1tsp turmeric
  • Salt – pepper as desired
  • Olive oil /vegetable oil

Preparation

Ok, first things first: Peel off potatoes, onions and garlic skin, and dice them. Also, cut tomatoes into the small chunks.

In a frying pan, heat the oil, and add potatoes, fry until golden brown, remove fried potatoes and set aside. Add oil into the same pan and , saute diced onions and garlic until transparent and soft, and set aside.

Now, for making meatballs, season ground meat with some salt and pepper. Mix well . Shape mixture into small meatballs. Heat the oil in the pan and . Fry meat balls until brown.
Next step, In a bowl with 300 ml boiled water add tomato paste, turmeric powder , some salt and pepper, and mix all ingredients very well.
As I told before, it is very easy and quick meal. Now, add fried potatoes, fried onions- and garlic, chopped tomatoes, and fried meatballs in a pot. Pour prepared liquid on it. Gently give a stir.

Simmer for about 30 minutes.
Now your food is ready. Serve it with bread.

یتیمچه

یتیمچه یکی از غذاهای سنتی ایران هست . اصل این غذا بدون گوشت بوده و یک غذای گیاهخواری و ساده میباشد. معنای تحت اللفظی یتیم + یعنی یتیم کوچک. علت نامگذاری این غذا به یتیمچه نبودن گوشت در آن بوده است. طرز تهیه این خوراک از یک منطقه به منطقه دیگر متفاوت بوده و با مواد مختلفی درست میشود ولی همگی اونها یتیمچه نامیده میشن. مثل یتیمچه بادمجان- یتیمچه کدو– یتیمچه با حبوباتی مثل عدس – نخود و لوبیا و یا یتیمچه سیب زمینی که امروز من میخواهم معرفی کنم. بعضی از یتمچه ها بدون گوشت بوده و در بعضی از دستور تهیه ها گوشت هم اضافه شده

فکر میکنیم حتمن لازم نیست مواد اولیه برای تهیه ی یک غذا گران باشه تا بتونیم یک غذای خوشمزه درست کنیم بلکه گاهی با مواد اولیه کم و خیلی ارزان هم میشه خالق غذاهای خوشمزه ای شد که به دلچسبی غذای هتل های ۵ ستاره هستند..

یتیمچه هم یکی از همان غذاهای ساده و ارزان قیمت هست ولی در عین حال یک خوراک خوش آب و رنگ و خوشمزه که معمولن با نان سرو میشه .

مواد لازم

دویست گرم گوشت چرخ کرده گوساله یا گوسفندی

سه عدد گوجه فرنگی درشت

سه عدد سیب زمینی درشت خرد شده

دو عدد پیاز پوست گرفته و خرد شده

جهار حبه سیر پوست گرفته و خرد شده

یک ق غ رب گوجه فرنگی

یک ق چ زردچوبه

نمک و فلفل به میزان نیاز

روغن زیتون یا هر روغن مایع دیگر

طرز تهیه

داخل یک تابه روغن را گرم کرده و سیب زمینی های خرد شده را سرخ کنید تا کاملن طلایی شوند. سیب زمینی هارا کنار بگذارید. داخل تابه پیاز و سیر خرد شده را تفت دهید تا نرم شده و آنها را هم کناری بگذارید. به گوشت چرخ کرده نمک وفلفل به میزان لازم افزوده و با دست ورز دهید. گوشت را به صورت کوفته های ریز در آورده و در تابه سرخ کنید.

داخل یک کاسه 300 میلی لیتر آب جوش را با رب گوجه فرنگی – زردچوبه – نمک و فلفل مخلوط کنید. حالا سیب زمینی سرخ شده- پیاز- سیر- کوفته ریزه ها- گوجه فرنگی های خرد شده را داخل یک قابلمه بریزید. به آرامی مواد را یک هم کوچک بزنید. قابلمه را روی حرارت متوسط رو به به پایین قرار داده تا به مدت 30-20 دقیقه بپزد و جا بیفتد.

ما معمولن با نان این غذا رو سرو میکنیم ولی اگر دوست داشتید با کته هم خیلی لذیذ خواهد شد.
