In my childhood, when my mother used to fry slices of zucchini ( kadoo) and aubergin ( baademjan) for preparing stew, we always took several fried slices and with a pinch of salt ate them. . Fried zucchini – eggplant were very yummy.
Ingredients
1 zucchini, thinly sliced
1 aubergine, thinly sliced
½ cup plain yogurt
1 small clove of garlic, grated
flat Lavash – tortilla or taftun bread
Pinch of salt and pepper
Oil
Preparation
In a pan heat the oil and fry slices of zucchini and aubergine. In a bowl mix grated garlic with yogurt and season with salt and pepper. Make zucchini or eggplants bites with garlic yogurt dip.
لقمه های کدو – بادمجان
دردوران کودکی هر وقت مادرم در آشپزخانه شروع به سرخ کردن کدو یا بادمجان میکرد که بعدن خورش درست کند – همیشه ما بچهها چند لقمه از بادمجون یا کدوی سرخ شده را قاپ میزدیم وفوری قورت می دادیم از بس خوشمزه بودن. این لقمه های کدو– بادمجون رو به یاد اون روزها تهیه کردم.
مواد لازم
یک بادمجان پوست گرفته و ورقه شده
یک کدوی پوست گرفته و ورقه شده
یک حبه سیر کوچک رنده شده
نمک و فلفل به میزان لازم
نصف پیمانه ماست
نان لواست – تافتون
روغن
طرز تهیه
بادمجان و کدو را سرخ میکنیم . ماست را با سیر رنده شده و کمی نمک و فلفل مخلوط می کنیم. لقمه های کدو و بادمجان را با نان و ماست و سیر سرو می کنیم

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother.
Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
