Ramadan or as we say in Farsi, Ramazan رمضان is around the corner.. Ramazan is the Muslims holy month of fasting.

Fasting during Ramadan means forgoing of all food or drink, from sunrise to sunset. It is recommended that before sunrise, Muslims eat a pre-fast meal known as Sahari سحری . This meal often resembles breakfast, but in some cultures it may include more dinner-like dishes.

Iftar literally means break of a fast. It is the evening meal with which Muslims end their daily Ramadan fast at sunset. They break their fast at the time of the call to prayer for the evening prayer.

In Muslim countries during the Ramadan or /Ramazan, People make traditional meals, desserts and sweets for Iftar time.

Fereni/firni فرنی or Persian rice pudding, is one the most delicious and popular desserts in Ramazan. It is a smooth dessert with soft texture, that is usually served for iftar time (the time for break of fast). It is made with rice flour آرد برنج (not rice grains), sugar, rose water, milk and saffron.


Ingredients

  • 800 ml full fat milk
  • 4 tbsp rice flour
  • 4 tbsp sugar
  • Pinch of saffron
  • 1 tsp rose water or vanilla extract

For garnishing

  • Almond flakes, crushed pistachio and cinnamon powder

Preparation
In a large pot, add rice flour, sugar and cold milk. Stirring until sugar and rice flour are dissolved. Mix ingredients properly to avoid of forming rice flour lumps.  Place the pot on a medium heat. Keep stirring, until bring the milk to a boil. After 8-10 minutes, mixture starts to thickened, add saffron threads and rose water. Keep stirring and allow to cook for 2 minutes more. Ferni is done. Immediately, Pour it into dishes or glasses and let to chill in the fridge.


Fereni might be served either warm or cold. Garnish with pinch of cinnamon powder, almond flakes or crushed pistachio. traditional in serving time you can add some rose petal jam مربای گل سرخ , honey or your favourite marmalade and jam to Ferni and eat it.

فرنی آرد برنج

در ماه مبارک رمضان مسلمانان هر کشوری غذاها و دسرهای خاصی برای زمان افطار تدارک می بینند. در ایران فرنی یکی از دسرهای خوشمزه و مقوی برای زمان افطار می باشد. فرنی دسری هست با بافت نرم و کرمی که با آرد برنج ( نه با دانه های برنج) – شیر- شکر- زعفران و گلاب تهیه میشود. فرنی معمولن در ماه مبارک رمضان طرفدار بیشتری دارد..

مواد لازم

هشتصد میلی لیترشیر پرچرب

چهار ق غ آرد برنج

چهار ق غ شکر

یک ق مرباخوری گلاب یا عصاره وانیل

مقداری پسته ی خرد شده

پودر دارچین

کمی زعفران دم کرده

طرز تهیه

قبل از هر چیز ظروف مربوط به سرو کردن فرنی را آماده کرده و کنار میگذاریم.

شیر سرد ر داخل قابلمه ریخته و آرد برنج و شکر را به آن اضافه میکنیم. مواد را مرتب هم می‌زنیم تا آرد برنج و شکر در شیر حل شوند. سپس قابلمه را روی حرارت متوسط قرار داده و مرتب هم می‌زنیم تا مانع از توده شده یا گلوله گلوله شدن آرد برنج و ته گرفتن فرنی گردد. .

بعد از حدود 10-8 دقیقه شیر شروع به جوشیدن و غلیظ شدن خواهد کرد . در این مرحله زعفران و گلاب را هم به مایه فرنی افزوده و به مدت دو دقیقه دیگر فرنی هم همچنان آرام ارام هم زده و سپس از روی حرارت بر میداریم. فرنی ما آماده هست.

فرنی آماده شده را فوری داخل ظرف مورد نظر ریخته و روی آن‌ها را با پودر دارچین و کمی پسته خرد شده تزیین میکنیم. فرنی را میتوان سرد یا گرم سرو کرد. به صورت سنتی فرنی را همراه با مربای گل سرخ سرو میکنند ولی اگر این مربا را دوست ندارید با شیرین کننده های دیگری مثل عسل یا مربا ی مورد نظرتان سرو کنید. .

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
