Tomato Quiche

I love my tomato quiche. It’s easy to make it  with lovely taste.

Ingredients for the pastry
175 g plain flour
75 g unsalted butter
1/4 cup water
½ tsp salt

For the filling
250 g cheddar cheese/ shredded
6 large tomatoes
5 eggs
100 ml milk
Salt – pepper to taste
Dried thyme powder

Preparation
Preheat the oven to 180 C. For the pastry, put the flour into a bowl, add butter and salt. Mix together with your hand. َGradually, add 4-5 tbsp of water to flour and mix all ingredients and knead the dough for 5 minutes, until you have non sticky nice dough.


Grease a deep tart tin. Roll the pastry out to line of the tart tin and refrigerate 30 minutes. Then Pour milk over the pastry. Whisk the eggs and pour over the milk, then add shredded cheddar cheese, cover with slices of tomatoes and season with salt – pepper and thyme powder.
Bake for 40 minutes until the mixture has set and the top is golden. Leave in the tin for a few minutes before serving.

کیش (پای) گوجه فرنگی

کیش ( پای) یک نوع خوراک خمیر دار هست. انواع گوناگونی دارد و می توانید به صورت سرد یا گرم سرو کنید.

مواد لازم برای تهیه ی خمیر

صدوهفتادوپنج گرم آرد سفید

هفتادوپنج گرم کره

یک چهارم پیمانه آب

نصف ق چ نمک

مواد لازم برای داخل پای گوجه فرنگی یا کیش گوجه فرنگی

دویست و پنجاه گرم پنیر چدار رنده شده

شش عدد گوجه‌فرنگی حلقه شده

پنج عدد تخم مرغ

صدوپنچاه میلی لیتر شیر

نمک و فلفل به میزان لازم

مقداری آویشن: زعتر خشک

طرز تهیه خمیر

فر را روی حرارت 180 درجه سانتیگراد گرم کنید.

داخل یک‌کاسه آرد را با نمک و کره مخلوط کرده و بادست هم بزنید. سپس چهار – پنج ق غ آب را کم کم به مخلوط آرد افزوده و همه ی مواد را با هم مخلوط کرده 5 دقیقه خمیر را با دست ورز دهید تا یک خمیر نچسب داشته باشید.

. ظرف قالب را آماده کنید و به دیواره و کف ظرف کره بمالید. خمیر را د داخل قالب پخش کنید بطوریکه تمام دیواره ی قالب را بپوشاند. ظرف حاوی خمیر را به مدت نیم ساعت در یخچال قرار بدبد که کمی خودش را بگیرد.

در این بین مواد داخل کیش ( پای ) را آماده می کنیم. پنیر چدار را رنده کنید- گوجه فرنگی ها را حلقه کنید- تخم مرغ ها را هم بزنید. خمیر را از یخچال خارج کرده – ابتدا شیر را روی خمیر بریزید- سپس تخم مرغ های همزده را و بعد پنیر رنده شده و بعد گوجه فرنگی های حلقه شده را اضافه کنید. نمک – فلفل و آویشن را روی مواد گوجه خا بپاشید. فر را از قبل گرم کنید. کیش را داخل فر گذاشته و در 160 درجه ی سانتیگراد و بگذارید به مدت 40 دقیقه و تا زمانی که سطح پای خود را گرفته باشد در فر بپزد. کیش آماده شده رااز فر خارج کرده و بگذارید برای چند دقیقه در قالب بماند و بعد سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
