Persian celery stew ( khoresh karafas)

Firstly, celery in Farsi language is called ‘ karafas’. Secondly, this is heavenly deliciousssss Persian dish. I am sure among your meals, are some of them that flavour and taste develops more better next day, and celery stew is one of those. Basically, this dish made with celery, parsley and mint, … So there are some notes before cooking it.
Cooking meat first, allows the meat turn into the broth and you make your first layer of flavour. Then, celery itself is star of this dish, so do not let it overcooks and mushy.

 

 

Ingredients
300 g beef or lamb meat
2 large onions, chopped
2 medium tomatoes or some cherry tomatoes, chopped
1 bunch of celery, washed and chopped
1 bunch of parsley, washed and chopped
1 bunch of mint, washed and chopped
2 tbsp lime/lemon juice
Salt – pepper powder to taste
½ tsp turmeric
Oil

 

 

Preparation
In a pot with water, add one of chopped onions and meat. Allow cooking until tender. In a pan heat the oil and sauté chopped other onion until becomes soft and slightly brown, set aside. Then, sauté chopped celery, parsley and mint for 5 minutes, stir frequently.
Once meat cooked, add sautéed vegetables and onion to the meat. Season with salt and pepper. Add turmeric and lime juice. Pour 1 ½ cup water to the pot and allow cooking for 20 minutes. Add tomatoes in last 10 minutes.
Serve stew with steamed rice.

خورش کرفس

این خورش یکی از لذیذترین و خوش آب و رنگ ترین غذاهای ایرانی می باشد. مزه ی این خورش حتی چند برابر بهتر خواهد شد اگر برای روز بعد نگه داشته شود. کرفس – نعنا و جعفری مواد اولیه این خورش می باشند. جزو مواد لازم برای تهیه ی این خورش گاهی تفاوت هایی هست مثل استفاده از آبغوره – لوبیا یا آلو ولی من این دستور را ترجیح می دهم. یکی دونکته ی لازم در مورد تهیه ی این خورش : اگر گوشت جداگانه پخته شود خیلی بهتر هست. چون کرفس سبزی اصلی این خورش می باشد نباید زیاد سرخ شده و له شودو باید در خورش بچشم آید.

مواد لازم

سیصد گرم گوشت خورشتی گوساله یا گوسفندی

دو عدد پیاز درشت  خلالی خرد شده

دو عددگوجه فرنگی درشت یا تعدادی گوجه ی ریز

یک عدسته کرفس شسته و خرد شده

یک دسته جعفری  ریز خرد شده

یک دسته ی کوچک نعنای تازه و خرد شده

دو ق غ آبلیمو یا آبغوره

نمک و فلفل به میزان نیاز

نصف ق چ زردچوبه

روغن

 

طرز تهیه
در یک قابلمه گوشت را همراه با یکی از پیازهای خرد شده و مقداری آب بگذارید خوب بپزد و نرم گردد. تا زمان پخت گوشت- در یک تابه مقداری روغن را گرم کرده و پیاز دوم را تفت دهید تا کمی تغییر رنگ داده و نرم شود. سپس سبزیجات خرد شده را نیز برای 5 دقیقه تفت دهید.
زمانیکه گوشت آماده شد- سبزیجات و پیاز تفت داده شده را به گوشت اضافه کنید. نمک و فلفل به میزان لازم اضافه کنید. زردچوبه و آبلیموو یک و نیم پیمانه آب را نیز به قابلمه بیفزایید. بگذارید برای 20 دقیقه با حرارت ملایم بپزد. این خورش خوشمزه را با کته یا پلو سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
