Mirza Ghasemi

Mirza Ghassemi  is an Iranian eggplant-tomato  appetizer or main dish based on tandoori or grilled aubergine  or eggplant. So if you are eggplant lovers. This dish is just for you. Basically it is roasted aubergines in tomato/garlic sauce.

Mirza ghasemi is a dish from Gilan province استان گیلان, in North of Iran near Caspian sea.

Obviously, Main star of this dish is eggplant or as we say in Farsi bademjan.

Mirza Ghasemi is a simple, easy and unexpensive dish . It’s a vegetarian eggplant meal Plus ,once you taste this dish you are going to fall in love with it and will ask for more!

َAll ingredients for this meal, you can easily find in your local grocery.

It is made with just a handful of ingredients such as:  eggplants,  fresh garlic, tomatoes , and eggs, with spices such as turmeric, salt, and pepper.

The flavor for this eggplant dish comes from smoked eggplants . It can be served with flat naan bread such as Lavash bread  نان لواش, pita or tortilla bread as a side dish or with rice as a main course .

Ingredients
2 large eggplants, cut into half
2 large tomatoes, finely chopped
3-4 cloves garlic, finely chopped
3 eggs
1 Tsp turmeric
Salt and black pepper to taste
Olive oil

Preparation

Cut eggplants into half. Grill them in the oven or on the gas stove until blackened. Just remember, If you want to roast eggplants on the gas stove or grill, place the flame on low heat. If the stove flames are too high, the surface of the eggplants burns but the flesh remains raw.

When they are grilled, allow eggplants cool down and then remove skin and  chop finely and set aside.

put a good drizzle of olive oil in a large frying pan over a medium heat and slowly fry chopped eggplants for 10-15 minutes and . stirring frequently.

 Add chopped  or blended tomatoes  and chopped garlic, to fried eggplants. sprinkle turmeric and season with salt and pepper. Gently stir all ingredients and cook for further 10 minutes or until their water/juice is drained and evaporated.

Then, crack the eggs and pour into the aubergines mixture. Stir well until blended and cook for 3-4 minutes. Of course, The eggs can be scrambled or fried separately and served with eggplants and tomatoes. Now are Mirza ghasemi is ready.

Serve this beautiful eggplant dish warm with flat naan bread or rice.

And Store the leftovers in an airtight container and refrigerate for up to two days.

 

میرزا قاسمی

یک دستور غذای دیگه برای کسانی که عاشق خوراک با بادمجان هستند. میرزاقاسمی یکی از غذاهای محبوب و خوشمزه هست که در اصل از نواحی شمالی ایران و اطراف دریای کاسپین آمده ولی در همه جای ایران معروف و محبوب هست.

میرزا قاسمی یک خوراک فوق العاده لذیذ- خوش آب ورنگ و ساده هست که بخاطر کبابی کردن بادمجان -طعمی دودی داره و غذای مناسبی برای گیاهخواران هم میتونه باشه.

مواد لازم

دو عدد بادمجان درشت

دو عدد گوجه‌فرنگی درشت نگینی خردشده

سه چهار حبه سیر

سه عدد تخم مرغ

یک ق چ زردچوبه

نمک و فلفل به میزان لازم

روغن

طرز تهیه

بادمجان ها را از وسط نصف کرده و در داخل فر یا روی گاز کباب کنید.فقط بیاد داشته باشید که از حرارت متوسط برای کباب کردن بادمجان ها استفاده کنید در غیر اینصورت سطح بادمجان ها سوخته ولی داخل بادمجان ها خام باقی میماند. بعد از کباب کردن بادمجان ها- بگذارید بادمجان های کبابی خنک شده – پوست آنها را گرفته و به صورت ریز خرد کرده و کنار بگذارید.

روغن را در تابه گرم کنید- بادمجان های خرد شده را برای15-10 دقیقه در روغن سرخ کنید و مرتب هم بزنید. سپس گوجه فرنگی های خرد شده – ادویه ها و سیر خرد شده را اضافه کنید و برای 10 دقیقه ی دیگریا تا زمانی که آب موجود در میرازقاسمی بخار شده و سرخ شوند.در این مرحله – تخم مرغ ها را شکسته و روی بادمجانها بریزید. خوب همه ی مواد را با هم مخلوط کنید و بگذارید برای4-3دقیقه دیگر روی حرارت باشد.

این غذای فوق العاده لذیذ را به صورت گرم و با نان یا کته سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
