Indian Chicken Biryani

This dish is one of the mosssst tastiest meals. Full of flavour, colour and taste.

Ingredients
500 g chicken thigh or breast / dices
250 g rice
1 cup plain yogurt
5 Tbsp fried onion
5 Tbsp fresh mint leaves
5 Tbsp fresh coriander leaves
4 Tbsp saffron water
1 Tbsp mixed  Spices includes: cayenne powder, coriander powder, cumin powder, turmeric powder, Salt, garam  masala,  cardamom, cinnamon,

1/2 tsp  ginger paste

1/2 tsp garlic paste
Butter or Ghee  and oil
Instructions
For marinating the chicken meat, put diced chicken meat in a bowl , add cayenne, coriander, cumin, turmeric powder, salt, garam masala, ginger-garlic paste and 3 Tbsp olive oil. Using your hand and combine all ingredients together well. Then cover the marinated chicken and fridge it over the night. It will help chicken meat becomes tender with nice flavour of all those beautiful spices.
Now, in a bowl with yogurt, add more spices: cardamom, cinnamon, pinch of salt, and cayenne powder and blend well.
Put marinated chicken meat at the bottom of a pot, pour spicy yogurt mixture top of the chicken. Add 3 Tbsp water the yogurt. Spread some fried golden onions, some mint and coriander leaves top of the chicken. Set aside.
Keep remains of fried onions, mint and coriander leave for the rice. Soak the rice in water for 30 minutes. Add 1Tbsp salt to the rice.
Bring the water to a boil in the pot, drain salty water of rice and let rice cook for 10 minutes. Drain the rice in a colander and spread par-cooked rice all over the chicken , then add saffron water on top of the rice, add remains of fried onions, coriander and mint leaves top of the rice. Pour melted butter all over the rice.
Cook the rice: Put the pot on high flame for first 5-10 minutes, after that, 15 minutes on medium flame and at the end 10-15 minutes on low flame.

بریانی مرغ هندی

این غذا بیش از اندازه لذیذه و با اینکه چند روز پیش بریانی مرغ را تهیه کرده بودم ولی با اینحال الان که در حال آماده کرده طرز تهیه ی این غذا هستم از یاد آوری مزه ی آن آب دهانم راه می افته 🙂 استفاده از ادویه های مختلف و سبزیجات طعم بینظیری رو برای این برنج ساخته..

مواد لازم

پانصد گرم ران یا سینه ی مرغ خرد شده

سیصد گرم برنج

یک پیمانه ماست معمولی

پنج ق غ پیاز سرخ شده

پنج ق غ برگ تازه ی نعنا

پنج ق غ برگ تازه ی گشنیز

چهار ق غ آب زعفران

یک ق غ ادویه شامل: فلفل- پودر تخم گشنیز- پودر زیره- زردچوبه- نمک- گارما ماسالا- – پودر هل- پودر دارچین-

نصف ق چ زنجبیل رنده شده

نصف ق چ سیر رنده شده

کره و روغن به میزان لازم

طرز تهیه
تکه های خرد شده ی مرغ را در یک کاسه ریخته و پودر فلفل- گشنیز- زیره- زردچوبه – نمک – گارما ماسالا- سیر و زنجبیل رنده شده به اضافه ی 3 ق غ روغن زیتون را به مرغ اضافه کنید. با دست مرغ را با ادویه های ذکر شده خوب مخلوط کنید. در ظرف مرغ را گذاشته در یخچال شب تا صبح بگذارید بماند. ماندن گوشت در روغن و ادویه باعث می شود گوشت بسیار ترد و مزه ی ادویه های به خرد گوشت برود.
حالا در یک پیاله ماست را با پودر هل- دارچین – کمی نمک- و فلفل قرمز مخلوط کنید. مرغ را در ته یک قابلمه بچینید و ماست ادویه دار را روی مرغ بریزید . سپس 3 ق غ آب روی ماست بریزید. روی مرغ مقداری از پیاز سرخ شده و نعنا و گشنیز خرد شده- ریخته و مرغ را کنار بگذارید. باقی مانده ی پیاز سرخ شده و سبزیجات را برای برنج نگه دارید.
برنج را به مرحله ی آبکشی برسانیدو سپس برنج را روی مرغ بریزید.آب زعفران را روی برنج پخش کنید و باقی مانده ی پیاز سرخ شده – نعنا و گشنیز را نیز روی برنج پخش نمایید. پیاز سرخ شده رنگ و طعم خوبی به برنج می دهد.
در آخر کره ی آب شده را روی برنج ریخته و بگذارید دم بکشد: برای 10-5 دقیقه اول با حرارت بالا بعد از آن با حرارت متوسط به مدت 15 دقیقه و بالاخره با حرارت خیلی کم برای 15-10 دقیقه .
زمانیکه برنج دم کشید آن را با تکه مرغ های برشته شده از ته دیگ سرو کنید.
