Azerbaijani prune stew with chicken

Prune stew with chicken is a kind of  stew ( khoresht) which is made with chicken and prune. It is favourite and trendy dish.

ingredients

  • Chicken breast /thigh
  • 5-6 prunes for per person
  • 3 medium onions, finely chopped
  • 1 clove of garlic
  • Salt – pepper to taste
  • 1.2 tsp turmeric
  • 1 tbsp saffron water
  • Oil

 

preparation
pour water in a pot, add 1 tsp salt. Bring it to boil and add chicken pieces and one chopped onion and garlic. Allow to cook.
Thinly slice two other onions and Sauté in oil. Then add turmeric and peppers. Cook until onions softened. Then add prunes and fry for 2-3 minutes. Set aside.
Once chicken cooked, remove them from the pot and fry in a pan until browned. Add chicken meat, and 1 tbsp of saffron water to the sautéed onion. Taste the stew, if there is need, seasoning again.
Add 200 ml water to the stew, and allow to cook on a medium heat for 20 minutes.
Serve it with saffron rice.

 

خورشت آلو مسمی اردبیلی

یکی از خورش های بسیار لذید اردبیلی  همین خورش آلو مسمی هست که با مرغ و آلو تهیه میشه. در عین سادگی  غذای خیلی خوشمزه و شیکی هست.

 

مواد لازم
مرغ هر نفر یک تکه سینه یا ران

پنج شش عدد آلوی سیاه برای هر نفر

سه عدد پیاز متوسط

یک حبه سیر

روغن به میزان لازم

نمک و فلفل سیاه به میزان نیاز

نصف ق چ زردچوبه

یک ق غ آب زعفران

 

طرز تهیه
در یک قابلمه مقداری آب و نمک بریزید. پوست یک پیاز و سیر را جدا کرده و خردکنید و همراه با مرغ ها داخل قابلمه قرار دهید تا بپزد. آگر آب مرغ باقی ماند می توانید به عنوان عصاره ی مرغ به خورشت اضافه کنید. بقیه ی پیاز ها را نیز پوست کنده و خلالی خرد کنید و در روغن کمی تفت دهید. سپس فلفل و زردچوبه را اضافه کنید. وقتی پیاز ها کمی نرم شدند آلو ها را نیز اضافه کنید وهمه ی مواد را کمی تفت دهید. نیازی نیست که پیاز ها کاملن سرخ شوند. مرغ های پخته شده را به کناری گذاشته و آب مرغ ها را داخل قابلمه بریزید. مواد سرخ شده را به قابلمه اضافه کنید. اگر نیاز به نمک داشت می توانید نمک بیشتری به خورشت بزنید. زعفران را با 5 قاشق غذاخوری آب جوش مخلوط و دم کنید. مرغ ها را به تکه های کوچک تر تقسیم کنید و کمی در روغن سرخ نمایید و به مواد سرخ شده ی داخل قابلمه اضافه نمایید. در آخریک قاشق غذاخوری زعفران را نیز به خورشت اضافه کرده – در قابلمه را بگذارید تا به مدت 20 دقیقه در حرارت ملایم خورشت قوام بیاید. نوش جان.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
