Armenian Gata Bread طرز تهیه نان گاتا

Gata گاتا is an Armenian  pastry or sweet , and aromatic bread with a shiny glaze crust. Gata is one of Armenian’s cake for Christmas and new year, which is baked by Armenians in Iran.
Gata can be found in variety of size, shape, decoration and filling. Sometimes gata is Palin and without decoration and sometimes gata is a layer cake with some kind of unique, and scrumptious   .

If you know how much gata is delish, you would love it.

In old times, gata was baked inside the tandoori oven but nowadays, gata is baked in the oven. This cake is HEAVENLY DELICIOUS. It is a MUST and you should try this delisicous cake bread. 

You can find this beautiful gata cake in most of confectionery stores in Terhan and other cities in Iran.

Although gata pastry is baked all year round in Armenia, but this bread is traditionally eaten at christmas with a filling that consists of flour, butter, suagr and spices such as cinnamon, nutmeg, walnuts and raisin.

In som veriations of gata, a button or a coin is placed inside the bread, so whoever gets the button or coin, is supposed to be blessed with good fortune. It is very interestings, I love it.

Ok let see what ingredients we will need for making gata:

Ingredients for the dough

  • 2 ½ cups of all-purpose flour
  • 1 whole egg plus egg wihite
  • 1 egg yolk
  • 20 g unsalted butter
  • 2/3 cup of clotted cream (if for any reason you are not able to use clotted cream, use same amount of plain Greek yogurt)
  • 1 large orange zest
  • 1 Tbsp sugar
  • 1 Tsp baking powder
  • 1tbsp milk
  • Pinch of salt

Ingredients for the filling

  • ¾ cup sugar
  • 1/2 cup flour
  • 20 g unsalted butter
  • ½ Tsp cinnamon powder
  • ¼ Tsp nutmeg powder
  • ½ cup raisins
  • 2/3 cup crushed walnuts


Preparation
Using a blender and mix sugar and butter for 2-3 minutes. Then add clotted cream or plain yougurt , one whole egg and one egg white .mix for another 2 minutes. In another bowl, mix flour with salt and baking powder.
Now, Add flour to the butter mixture in two steps and blend for 2-3 minutes.

Next add orange zest and knead the dough with your hand, until orange zest combined with dough. Cover the dough with a plastic wrap and place it in the fridge for 30 minutes.

Preheat the oven at 190C.

While dough is in the fridge, prepare the filling. In a bowl with sugar and butter, add cinnamon, nutmeg and flour. Mix all ingredients and make it crumbly. Now, add crushed walnuts and raisins to the flour and commbine well.

Afterr 30 minutes, Sprinkle some flour on the working surface and place the dough on it and spreading out flat . Put the filling on the centre of the dough and gather the sides of the dough and give a round shape. Sprinkle flour on top of the dough and gently seal the edges.

Grease the sides and base of a baking pan and line the base of pan with parchment paper. Place the dough in the pan and gently tap on the dough and press down. Mix egg yolk with 1 tbsp of milk and brush top of the cake. Using a fork and make a pattern top of the dough. Place it in the oven and bake it for 30 minutes.
This heavenly delicious cake can be saved for a week in the fridge.

نان گاتا

این نان (کیک) دلفریب و خوش عطر و بو با ظاهری ترد یک نوع شیرینی ارمنی می باشد. گاتا را می توان در اشکال – اندازه ها و دستور تهیه های متفاوت می توان یافت. در زمان های قدیم گاتا را داخل تنور می پختند. این نان ( کیک) فوق العاده خوشمزه هست و اگر امتحان نکنید یک بازنده محسوب خواهید شد

در بیشتر قنادی های ایران گاتا را می توان خریداری کرد.

مواد لازم برای تهیه خمیر

دو و نیم پیمانه آرد

یک عدد تخم مرغ + یک عدد سفیده تخم مرغ

یک عدد زرده تخم مرغ

بیست گرم کره ی بدون نمک

: دوسوم پیمانه سرشیر یا قیماق درصورت عدم استفاده از سرشیر میتوانید به همان میزان از ماست یونانی یا ماست چکیده که غلیظ هست استفاده کنید

یک ق غ پوست پرتقال رنده شده

یک ق غ شکر

یک ق چ پودر بیکینگ پودر

یک ق غ شیر

کمی نمک

مواد لازم برای داخل خمیر

یک دوم پیمانه آرد

سه چهارم پیمانه شکر

نصف پیمانه کشمش

دوسوم پیمانه گردوی خرد شده

طرز تهیه

کره و شکر را داخل مخلوط ریخته و 3-2 دقیقه با هم مخلوط کنید تا کره نرم شود. سپس قیماق – یک عدد تخم مرغ به اضافه ی یک سفیده ی تخم مرغ –را با هم مخلوط نمایید

آرد را با نمک و بیکینگ پودر هم زده و به آرامی آرد را به مخلوط بالا اضافه کرده و همچنان با مخلوط کن برای 2 دقیقه هم بزنید خمیر را از دستگاه مخلوط کن خارج کرده و با.پوست پرتقال را رنده شده هم بزنید. خمیر را برای 30 دقیقه در یخچال قرار دهید.

تازمانیکه خمیر در یخچال هست مواد داخل خمیر را آماده کنید.

در یک کاسه ی بزرگ شکر – کره – دارچین – جوز هندی و آرد را با هم مخلوط کنید تا به صورت تکه تکه در آید. در این مرحله گردو و کشمش را اضافه کنید و همه را هم بزنید.

اجاق را روی حرارت 190 درجه ی سانتیگراد گرم کنید.

کمی آرد روی سطح کار پخش کنید. خمیر را از یخچال خارج کرده و روی آرد باز کنید. مخلوط گردو- کشمش را وسط خمیر ریخته و گوشه های خمیر را جمع کرده و به صورت یک گلوله ی بزرگ در آورید. به کف ظرف کیک پزی و دیواره ی آن کمی کره مالیده و کف ظرف را با کاغذ روغنی آشپزی بپوشانید. خمیر را داخل ظرف قرار دهید.زرده ی تخم مرغ را با یک قاشق غذاخوری شیر مخلوط و روی خمیر بمالید.

با یک چنگال می توانید روی خمیر را طرح دهید.

خمیر را در فر قرار داده و برای 30 دقیقه بپزید.

این کیک خوشمزه را می توانید در یخچال برای یک هفته نگه داری کنید.
