Iranian Okra Stew with Beef خورش بامیه

Okra stew خورش بامیه is a hearty- comfort food and a staple recipe in my kitchen. it is one of the traditional Iranian dishes. In Farsi the word Khoresht/khoresh خورش means stew and Okra means’ Bamieh بامیه’ . Khoresht-e  bamieh is one of the traditional Iranian dishes and a popular dish in Middle East countries too.  In Iran, Okra stew is traditionally from southern part of Iran. It is a flavourful dish with tender okra that is  served with rice. So, if you like okra, you would love and enjoy this tasty dish.

Ingredients

  • 200g diced beef/lamb
  • 300g okra, diced
  • 1 lemon or lime juice
  • 1 large tomato, diced
  • 2 mediums onions, finely chopped
  • 1 Tbsp tomato paste
  • ¼ Tsp turmeric
  • 1 tsp cumin powder
  • Salt- pepper to taste
  • Oil

Preparation
Rinse and dry the okra. Trim the ends and cut into pieces.

Heat the oil in a pan, sauté diced meat until change the colour. Season with cumin,  pepper and turmeric. Transfer  the meat to  a pot with enough water, and cook It until meat is tender.
Fry chopped onions and Set aside.In the same pan, add more oil and sauté okra.

Mix 300 ml boiled water, lemon juic, tomato paste and salt together. our tomato sauce is ready.. Add cooked meat, fried onions, okras, chopped tomato in a pot. Pour in, prepared tomato sauace.,.Stir with a wooden spoon and put the lid on.

The okra doesn’t take long to cook so make sure not to overcook the stew. Simmer the okra stew for about 20 minutes at low heat, until tender.
Serve the stew with rice or with couscous. Or if not a fan of rice or couscous, serve the okra stew with slices of Lavash bread or Pita bread.

مواد لازم

دویست گرم گوشت خورشتی

سیصد گرم بامیه

یک عدد گوجه‌فرنگی خرد شده

دو عدد پیاز نگینی خرد شده

یک عدد لیمو ترش

یک ق چ زیره

یک ق غ رب گوجه‌فرنگی

یک چهارم ق چ زردچوبه

نمک و فلفل به میزان نیاز

روغن زیتون

طرز تهیه

بامیه ها را شسته و دو سر آنها را برش داده و به تکه های متوسط خرد میکنیم.

مقداری روغن را در تابه گرم کنید و گوشت خورشتی را در آن تفت دهید تا رنگ گوشت تغییر کند. زردچوبه – زیره و فلفل را نیز به گوشت در حال تفت بیفزایید. سپس گوشت را با مقدار مناسبی آب بپزید تا نرم پخته شود. اگر از آب گوشت باقی ماند می توانید در حین پخت خورش به آن اضافه کنید.

پیاز ها را ریز خرد کرده و تفت دهید تا نرم شوند.بامیه هارا در روغن تفت دهید. زمانیکه گوشت آبپز شد. 300 میلی لیتر آب جوش را همراه با عصاره ی گوشت – – رب گوجه فرنگی – آب لیمو ترش و نمک مخلوط کرده و همراه با پیازها و بامیه های تفت داده شده و گوجه فرنگی خرد شده به گوشت اضافه کنید. بامیه دارای بافت لطیفی هست و نیاز نیست برای مدت طولانی روی حرارت باشد. اجازه دهید خورش با حرارت کم برای 20 دقیقه بپزد و قوام آید. خورش آماده شده را با کته یا پلومیتوان سرو کردواگر زیاد دوستدار برنج نیستید و با نان میتوان سرو کرد. .

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
