Stuffed Spicy Pumpkin Breads

These cute pumpkin breads are soft, moist and simply baked with lovely taste of cinnamon, cardamom and walnuts.

Ingredients for dough

200g pumpkin purée

450g plain flour

25g melted butter

25g white sugar

2 eggs

1tsp salt-pep

2tsp dried yeast

kit strings

Ingredients for filling

2tbsp crushed walnuts or pecans

2tbsp sugar

2tsp cardamom

2tsp cinnamon

40g pumpkin puree

Preparation

Cook pumpkin until tender. Then purée with a food processor or use a tin of pumpkin purée. Add sugar and yeast into a ¼ cup of warm water. Mix together until sugar is dissolved, then leave it for 10 minutes until yeast activate.

Break eggs and put egg yolks in a bowl and egg whites in separate bowl. Beat together egg yolks.

In a large bowl with flour, add salt, beaten egg yolks, melted butter, yeast mixture and 200g pumpkin purée. Mix all ingredients ( about couple of minutes) until come together.

Put the dough in a slightly oily bowl. Cove it with damp towel and proof the dough until is doubled in size(about 70 minutes).

Meanwhile, prepare filling ingredients: in a bowl mix all ingredients for filling. Make small balls (11g each), set aside.

Once dough is ready, make pieces of 90g each. Take a ball of dough, put it on a lightly floured surface, and press it down a bit. Put one of filling balls in the middle of dough and give a flat shape to the dough. Coat kit string with flour. Now, tie the string around the dough ( as you see in the photos).Place all doughs in a baking tray. Cover it with a towel and leave it for 30 minutes.

Preheat the oven to 180C.

After 30 minutes, brush doughs with egg white glaze. Bake them for 12-15 minutes. After making bread, remove kit strings and brush with melted butter, dust with powdered sugar and for finishing touch, use small pieces of walnuts and press it to top of each bread.

نان توپر کدوحلوایی

این نونهای قشنگ و نرم با طعم هل و دارچین خیلی خیلی خوش عِطر و بو هستن و حتمن خوشتون میاد.

مواد لازم

دویست گرم پوره ی کدو حلوایی

چهارصدو پنجاه گرم آرد همه منظوره

بیست و پنج گرم کره ی آب شده

بیست و پنج گرم شکر سفید

دو عدد تخم مرغ

یک ق چ نمک

دو ق چ پودر یست

نخ ضخیم

مواد میانی

دو ق غ گردوی خرد شده

دو ق غ شکر

دو ق چ هل

دو ق چ دارچین

چهل گرم پوره ی کدو حلوایی

طرز تهیه

کدو حلوایی را آبپز کنید تا نرم بشه. با استفاده از غذاساز یا گوشت کوب کدوی حلوایی را له کنید تا پوره بشه یا اگر حوصله ی پختن کدو ندارید کنسرو آماده از پوره ی کدو حلوایی بگیرید. شکر را با پودر یست و یک چهارم پیمانه آب گرم ( نه آب جوشیده) مخلوط کنید تا شکر حل بشه و بعدش برای ده دقیقه بگذارید بمونه تا خمیرمایه آماده بشه و رویش کف کنه.

تخم مرغ ها را تو دو تا پیاله بشکنید:زرده ها در یک پیاله و سفیده ها در پیاله ی دیگه. زرده ها رو هم بزنید. داخل یک‌کاسه آرد رو با نمک- زرده ی تخم مرغ ها- کره ی آب شده – خمیر مایه و دویست گرم پوره ی کدو را برای دو سه دقیقه با هم مخلوط کنید و بعد داخل یک‌کاسه که کمی روغنی کردید خمیر رو قرار بدید . روی خمیر رو با یک حوله ی مرطوب بپوشونید و بزارید برای هفتاده دقیقه استراحت کنه تا خمیر دوبرابر اندازه اش بشه.

در این بین مواد میانی نون را حاضر می کنیم. تمام مواد لازم برای داخل نون را با هم مخلوط می‌کنیم و به صورت توپک های کوچک یازده گرمی در میاریم .

وقتی خمیر آماده شد اون رو به قطعه‌های نود گرمی جدا می کنیم. یکی از قطعه خمیر ها رو روی سطح آردی می‌گذاریم و به آرومی رویش فشار می دیم تا کمی مسطح بشه. یکی از توپک ها رو وسط خمیر میزاریم و خمیر رو به صورت گرد در میاریم.

حالا اون نخ هایی که گفته بودم رو کمی آردی کنید( مثل تصویر). بعد خمیر ها رو دونه دونه با نخ بپیچید ( مثل تصویر). خمیر هارو داخل سینی فر بزارید و رویش رو با یک حوله بپوشونید و بزارید باز برای نیم ساعت استراحت کنن.

فر رو روی حرارت 180 درجه ی سانتیگراد گرم کنید. بعد از نیم ساعت خمیر ها رو داخل فر بزارید و برای 15-12 دقیقه آن‌ها رو بپزید.

وقتی نون ها حاضر شدن- نخ ها رو جدا کنید. روشون کره ی آب شده بزنید و پودر قند بپاشید. آخرین فوت کوزه گری هم این هست که وسط هر نون یک تکه ی کوچک گردو قرار بدید. خسته نباشید- اگر بدونید چقدر این نونها خوشمزه هستن .
