Bread sticks with green olives

I have made this bread sticks with chopped green olives. They last for 4-5 days with freshly soft texture ans soooooooo tasty.

Ingredients
3 ¼ cups of whole meal bread (but you can have plain flour as well)
2 ¼ Tsp dry yeast
¼ cup olive oil
1 cup green olives, finely chopped
1 Tbsp. sugar
2 Tbsp brown sugar
1 Tsp salt
1 ¼ cups warm water
4-5 Tbsp salted butter

 

Preparation
In a bowl with dried yeast, add warm water with a pinch of sugar. Cover the bowl with a lid and leave it for 10 minutes until yeast is activated.
Mix flour, salt and two different types of sugar in the mixer. Then add yeast mixture and olive oil to the flour. Mix on mediu,m speed for 5-6 minutes.
Grease a large bowl with some olive oil and place the dough in the bowl. Sprinkle some flour top of the dough. Cover it with kitchen towel for 2 hours.
After two hours, remove the dough from the bowl, place it on a floured surface. Using a rolling pin, roll it to a round shape dough. Spread chopped olives on the dough. Fold it up and using a rolling pin , and roll it to a circle shape. Cut out into strips. Give each one of strips a twist.
Lining the baking tray with parchment paper . Place twisted doughs onto the baking tray.
Cover them with a kitchen towel and leave them to rest for 40 minutes.
Preheat the oven to 205C.
After 40 minutes brush the top of the bread sticks with melted butter and put them in the oven.
Bake them until for about 15 minutes. Once they are ready, brush them again with more melted butter and enjoy these beautiful bread sticks.

 

 

نان زیتونی
من این نون های خانگی را با زیتون سبز تهیه کردم. این نونهای خوشمزه و قشنگ برای 5-4 روز بافت نرم و لطیف خود رو نگه می دارن.

مواد لازم

سه و یک چهارم پیمانه آرد  گندم یا آرد معمولی

دو و یک چهارم ق چ پودر یست یا مخمر نان

یک چهارم پیمانه روغن زیتون

یک پیمانه زیتون سبز خرد شده

یک ق غ شکر سفید

یک ق غ شکر قهوه ای

یک ق چ نمک

یک و یک چهارم پیمانه آب گرم نه آبجوش

چهار – پنج ق غ کره ی نمک دار

طرز تهیه
در یک پیاله پودر یست (مخمر نان ) را با آب گرم و خیلی کم شکر مخلوط کنید . سر پیاله را بپوشانید و بگذارید برای 10 دقیقه بماند تا مخمر عمل آید.
آرد را با نمک و دو نوع شکر مخلوط کنید. سپس مخمر آماده شده را همراه با روغن زیتون به آرد بیفزاییدو با مخلوط کن برای 5 دقیقه با سرعت متوسط هم بزنید.
داخل یک کاسه ی بزرگ را کمی روغنی کنید و خمیر آماده شده داخل کاسه پشت و رو کنید تا روغنی شود. روی خمیرکمی آرد بپاشید روی کاسه را با حوله بپوشانید و بگذارید برای 2 ساعت در یک مکان گرم بماند تا خمیر ور بیایید.
پس از 2 ساعت خمیر را از کاسه خارج کنید و روی سطح کار آردی قرار بدهید. خمیر را با وردنه باز کنید و زیتون های خرد شده را روی خمیر پخش کنید . خمیر را دوباره به صورت توپ در آورید و با وردنه آن را به صورت گرد صاف کنید . سپس با کارد چندین نوار مستطیل شکل باریک برش دهید. هر یک از خمیر های نواری را به آرامی یکبار بپیچید.
داخل سینی پخت نان را با کاغذ روغنی آشپزی بپوشانید. خمیر های حاضر شده را داخل سینی بچینید. روی خمیر ها را با حوله پوشانده و بگذارید برای 40 دقیقه استراحت کند.
فر را روی حرارت 205 درجه ی سانتیگراد گرم کنید.
بعد از 40 دقیقه روی خمیر ها کره ی آب شده بمالید. داخل فر قرار دهید تا برای حدود 15 دقیقه بپزد . در فر من 15 دقیقه با این حرارت کافی بود ولی فرها کاهی تفاوت دارند پس تازمانی که نان ها طلایی شوند بگذارید بپزند.
وقتی نان ها را از فر خارج کردید دوباره کمی کره ی آب شده روی نان ها بمالید و نوش جان کنید

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
