Salad Olivier ( Persian Potato Salad سالاد اولیویه )

Olivier salad سالاد اولیویه is very popular salad in Iran. It is a cold salad and is well known in many countries including Iran. I do not think you can find someone dislikes this dish in Iran. It’s a dish for four seasons. All of us in Iran, has delicious memories with Salad Olivier :). This delicious salad is available in sandwich shops of Iran.

Salad Olivier is a traditional Russian salad. Olivier salad was invented by a Belgian cook, Lucien Olivier, who was a chef in a Russian restaurant. The original and earliest Olivier salad, contained different ingredients with vegetables like lettuce, carrots, cucumber, meat such as: veal tongue, sausages ,chicken meat, fish, lobster, caviar, olive, and mayonnaise sauce. Gradually during the time, ingredients substituted boiled vegetables for fresh vegetables and meat too, such as boiled potatoes, carrots, eggs, boiled chicken.

Ingredients
4 large potatoes, cooked
3 eggs, hard boiled
1 shredded chicken breast
1 cup cooked green peas
200 g pickled cucumbers

Dressing
1 ½ cups mayonnaise
½cup Greek yogurt
3 tbsp lemon juice
Salt- pepper to taste
Sunflower or olive oil

Preparation
First is first: place all ingredients for dressing in a bowl and mix very well, set aside.
Shred the chicken meat. Mash the eggs and potatoes. Dice the pickled cucumber. Then in bowl, add shredded chicken, mashed eggs and potatoes, dices cucumber and green peas. Now mix ingredients with dressing sauce very well. Check seasoning.

سالاد اولیویه

سالاد اولیویه یکی از محبوب‌ترین سالادها در ایران هست. این سالاد به عنوان یک سالاد سرد سرو میشه و در بسیاری از کشورهای دنیا هم شناخته شده است.

فکر نمیکنم در ایران کسی از سالاد اولیویه بدش بیاد. همه ی ما خاطرات خیلی خوشمزه ای با این سالاد داریم و در کیف . مدرسه امون یا برای ناهار اداره بعضی وقتا این سالاد خوشمزه رو درست می کردیم.

بنظرم سالاد اولیویه غذایی برای چهار فصل سال هست . سالاد اولیویه در اصل یک سالاد روسی هست که اولین بار توسط یک سر آشپز معروف بلژیکی به نام لوسین اولیویر که در یک رستوران لوکس در مسکو کار میکرد تهیه شد.

نسخه ی اولیه و قدیمی سالاد اولیویه کاملن با چیزی که امروز درست میشه فرق داشت و فصل به فصل هم مواد اولیه این سالاد متفاوت بود. مواد اولیه که سالاد اصلی اولیویه با اون تهیه میشد شامل گوشت هایی مثل گوشت زبان گوساله – گوشت مرغ – سوسیس- ماهی- خرچنگ – خاویار- و سبزیجاتی مانند خیار سبز- پیازچه – هویج و زیتون بود. به مرور زمان مواد اولیه تغییر پیدا کرد و سبزیجات تازه تبدیل به سبزیجات آبپز شدند مثل سیب زمینی و هویج آبپز- تخم مرغ- مرغ آبپز.و سس مایونز.

مواد لازم

یک عدد سینه مرغ پخته و ریش ریش شده

چهار عدد سیب زمینی آبپز و کوبیده

سه عدد تخم مرغ آبپز

یک پیمانه نخود سبز پخته

دویست گرم خیار شور

مواد لازم برای سس

یک و یک دوم پیمانه سس مایونز

نصف پیمانه ماست : اگر ماست دوست نداشتید دو پیمانه سس مایونز استفاده کنید

سه ق غ آب‌لیمو ترش

نمک و فلفل

روغن آفتا بگردان یا روغن زیتون

طرز تهیه:

در یک پیاله سس مایونز- ماست- نمک- فلفل- آبلیمو و روغن زیتون را با هم مخلوط کرده و کنار بگذارید. در یک کاسه ی بزرگ هم سیب زمینی ها را پوست کنده و با گوشت کوب له کنید. تخم مرغ ها را هم به همین ترتیب. خیارشورهارا ریزریز خرد کنید. مرغ آبپز شده را ریش ریش نمایید. سس تهیه شده را روی مواد خرد شده بریزید و همگی را خوب با هم مخلوط کنید. سالاد اولیویه آماده هست. نوش جان

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
