Dopiazeh Aloo

Dopiazeh alooدو پیازه is a traditional and popular dish from Shriaz شیراز  in SW of Iran.

Let me explain what does dopiazeh aloo mean. Aloo in Farsi/Persian means plum and in other hand, it’s also a term used in Shiraz to mean potatoes.

And ,the word do means two and piaz means onions. 

So dopiazeh literally means ‘2 onionsor double onions in  Farsi language.

My mother used to make dopiazeh aloo  دوپیازه آلو as snack for us. It is simple and delicious potato dish. This tasty food contains potaotes, fried onions , spices and dried mint.
Dupiazeh might be served with tortilla or (pitta bread) or with rice.

Ingredients

  • 300 g potatoes
  • 1 large onion
  • Salt and pepper to taste
  • ½ tsp dried mint
  • 1/2  tsp turmeric
  • Slices of   Persian Lavash bread (naan) or tortilla bread
  •  Butter

How to make it
Peel the potatoes. Bring a large saucepan of water to the boil. Add the potatoes and cook until tender.  Then, drain them in a colander. Leave the potatoes in the colander for 5-6 minutes. Then, mash the potaotes until there are no lumps. If you feel tired, just stop for a minute and and give a break to your arms and then get back to mashing the potatoes again.

Melt the butter in a saucepan and fry chopped onion. Once onion is golden brown,  add turmeric, dried mint and pepper too and fry them just for few seconds and remove onion mixture from the heat. In a bowl with mashed potatoes, add onion mixture,    season with salt and Mix  all ingredients together well.

Now, Spread mashed potato mixture on the surface of torttila bread. Roll it up. Cut it into 3 small pieces.

دو پیازه سیب زمینی
وقتی که بچه بودیم مادرم  لقمه های کوچک و ساده ای با سیب زمینی آبپز و پیاز سرخ شده  را برای عصرانه درست میکردن.  یادش بخیر با اینکه خیلی غذای ساده ای بود ولی واقعن خوشمزه میشد. این غذا به دوپیازه الو شیرازمعروف هست و از ترکیب پیاز سرخ شده با سیب زمینی کوبیده و ادویه ها  و سبزهای خشک تهیه میشه  که میتوان به صورت سرد یا گرم آن را سرو کرد. .

مواد لازم

سیصد گرم سیب زمینی

یک عدد پیاز درشت

نصف ق چ  نعنا خشک

 نصف  ق چ زردچوبه

نمک و فلفل به میزان لازم

نان لواش

روغن زیتون یا کره

طرز تهیه

سیب زمینی ها راپوست گرفته – آبپز کنید. سیب زمینی های پخته شده را داخل آبکش قرار داده و بگذارید 6-5 دقیقه بمانند. سپس با گوشت کوب سیب زمینی ها را کوبیده تا کاملن به صورت له شده در آید.  پیازرا نگینی خرد کرده و با مقداری کره سرخ میکنیم در ,وقتی  پیاز سرخ  شد- زردچوبه- فلفل و نعنا خشک هم اضافه میکنیم  و فقط برای دو سه ثانیه آنها را با پیاز تفت داده و از روی حرارت برمیداریم. . در یک کاسه سیب زمینی کوبیده را با پیاز سرخ شده-و نمک مخلوط میکنیم تا به صورت یکدست در آید. مخلوط آماده شده را میتوانید مطابق تصاویر زیر روی نان لواش یا نان تورتیا پخش کرده و نان را رول کنید و برش های کوچک بزنید..به همین سادگی و به همین خوشمزه گی
