Pumpkin-Prunes Stew خورش کدوحلوایی و آلو

This dish is combination of meat with fruits and lots of warm spices such as Persian saffron زعفران that is king of spices, cumin زیره, cinnamonدارچین, turmericزردچوبه and chilli flakes. It is just a festival of flavour and aroma with beautiful colours. this dish is real taste of Autumn and Winter season and perfect for a cold evening outside

Ingredients

1 small pumpkin, peeled, deseeded, cooked and cut into chunks

300g lamb or beef, diced and cooked in advance

1 large onion,peele and diced

Handful prunes

1 tbsp tomato paste

1 lemon juice

1 tsp ground cumin

½ tsp ground cinnamon

½ tsp turmeric

½ tbsp Persian Saffron water

Sea salt and chilli flakes to taste

Method

Heat the oil in a saucepan over a medium heat, add diced onion and saute until soft and translucent . Then add the cooked meat to the onion and fry the meat without stirring, for 2-3 minutes, until  browned.

Now , Add turmeric, cinnamon, cumin and chilli flakes to the meat and fry for a minute until aroma released. Transfer fried ingredients to a pot. Cover the stew with enough boiled water about 1 cup and half in this recipe, Add tomato paste, to the pot.

Bring it to a boil. Then, add diced pumpkin and prunes. Adjust the seasoning. Give the stew a gently stir to combine all of the ingredients. Reduce the temperature to medium and simmer for 30 minutes .

When ready to serve, add lemon juice and saffron water. Gently mix all ingredients.

Serve this beautiful aromatic stew with rice or couscous. It’s equally as good the next day.

خورش کدو حلوایی و آلو

خورش کدو حلوایی یک خورش خوش رنگ و بو و بسیار لذیذ وترکیبی از گوشت با میوه‌ها و ادویه های گوناگونی مثل زردچوبه – دارچین – زیره – زعفران ایرانی که پادشاه ادویه ها هست همراه با نمک و فلفل. واقعن خورش خوشمزه ای هست حتمن امتحان کنید و نظرتون رو در همین پیج برام بنویسید.

مواد لازم برای خورش کدوحلوایی- آلوبخارا

سیصد گرم گوشت پخته ران گوسفندی

سه -چهار الو برای هر نفر

یک عدد پیاز درشت خرد شده

یک کدوحلوایی کوچک- پوست و دانه گرفته -آبپز و خرد شده

یک ق غ رب گوجه فرنگی

یک ق چ زیره

نصف ق چ دارچین

نصف ق چ زردچوبه

نصف ق غ زعفران دم کرده

یک ق غ آبلیمو ترش

نمک دریایی و فلفل به میزان لازم

روغن زیتون یا دیگر روغن های گیاهی

طرز پخت

کمی روغن رو در تابه گرم می‌کنیم و پیاز خرد شده رو تا موقع نرم شدن تفت می دیم. گوشت پخته رو به پیاز تفت داده اضافه می‌کنیم و می‌گذاریم تا گوشت سرخ شود.

مواد سرخ شده رو از تابه به یک قابلمه منتقل می کنیم. آب جوش به میزان لازم روی آنها میریزیم که در این طرز تهیه یک پیمانه و نیم میباشد. بعد زردچوبه- دارچین – زیره –و رب گوجه فرنگی-را به مواد داخل قابلمه اضافه می کنیم. همه ی مواد رو به آرامی با هم مخلوط می کنیم.

وقتی خورش شروع به جوشیدن کرد- کدو حلوایی پخته وآلو را هم داخل قابلمه می ریزیم. شعله ی گاز رو کم می‌کنیم و می‌گذاریم روی حرارت متوسط و به آرامی برای نیم ساعت خورش پخته و جا بیفتد. چون گوشت و کدو حلوایی قبلن پخته شدن درنتیجه نیاز به زمان طولانی برای جا افتادن خورش نیست.. وقتی خورش آماده شد قبل از سرو اب لیموترش و زعفران را هم اضافه کرده و خورش رو مزه می‌کنیم و اگر نیاز بود نمک و فلفل بیشتر اضافه می کنیم. این خورش لذیذ رو می تونید بابرنج – کوسکوس و یا بان نان میل کنید.
