Herbed Rice with Potatoes

This herbed rice is incredibly delicious. It is seasoned with aromatic spices, seeds, herbs and tossed in butter.

Ingredients

  • 2 cups rice
  • 150 g baby potatoes, cooked and peeled off
  • Mix herbs such as: mint, parsley, coriander, spring onions and dill, finely chopped
  • 1 Tsp fennel seeds
  • ½ Tsp ginger paste
  • ½ Tsp garlic paste
  • 2 Tsp pomegranate molasses OR ½ cup pomegranate seeds
  • ¼ Tsp chilli flake
  • Salt to taste
  • Butter

Preparation

In a pan, melt the butter, ad fennel seeds, pomegranate seeds or molasses, ginger/garlic paste and chilli flakes. Fry for 1 minute, set aside.

Saute chopped herbs for 5 minutes. Add rice , water, cooked potatoes and pomegranate sauce, season with salt. Gently stir. Cover the pot with a lid and cook the rice.

Herbed rice with potatoes

 

Ingredients

2 cups rice
150 g baby potatoes, cooked and peeled off
Mix herbs such as: mint, parsley, coriander, spring onions and dill, finely chopped
1 Tsp fennel seeds
½ Tsp ginger paste
½ Tsp garlic paste
2 Tsp pomegranate molasses OR ½ cup pomegranate seeds
¼ Tsp chilli flake
Salt
Butter
Preparation

Saute chopped herbs for 5 minutes. Add rice , water, cooked potatoes and pomegranate sauce, season with salt. Gently stir. Cover the pot with a lid and cook the rice.

 

کته ی سبزی با سیب زمینی

این کته ی سبزیجات فوق العاده لذیذ بوده و ترکیب شدن سبزیجات معطری مثل نعنا – شوید همراه با سیب زمینی و ادویه هایی همچون رازیانه شانس امتحاند کردن طعم جدیدی را به شما خواهد داد.

مواد لازم

دویست گرم برنج

صدوپنجاه گرم سیب زمینی کوچک

سبزیجات خرد شده شامل دسته ی کوجکی از جعفری – گشنیز- پیازچه – شوید و نعنا

یک ق چ رازیانه

نصف ق چ زنجبیل رنده شده

نصف ق چ سیر رنده شده

نصف پیمانه رب انار

کمی فلفل تند خشک

نمک به میزان لازم

کره یا روغن مایع

طرز تهیه

در یک تابه کره را آب کرده و دانه های رازیانه – رب انار- فلفل- زنجبیل و سیر رنده شده را برای 1 دقیقه تفت دهید تا عطر ادویه ها بلند شود. سس آماده شده را کنار بگذارید .

سبزیجات خرد شده را نیز 5 دقیقه تفت دهید. برنج – آب برای پخت کته – نمک – سس رب انار و سیب زمینی های پخته را روی سبزیجات تفت داده ریخته و به آرامی مواد کته را با هم مخلوط کرده و بگذارید دم بکشد.

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
