Persian pomegranate Aash/soup (Aash-e Anaar)

Ash-e anaar or Annar ashi ( Pomegranate soup) is a tasty and hearty. Star of this dish is gorgeous pomegranate seeds and juice. It’s a soup with tiny meat balls, fresh herbs such as mint, coriander,… and aromatic spices like cinnamon and earthy turmeric. Pomegranate soup is just perfect dish for a cold day.

Persian pomegranate soup

200 g ground meat ( beef or lamb)

1 onion, grated

2 cups sour pomegranate juice

½ tsp ground cinnamon

½ tsp turmeric

1 cup rice

1 small bunch of parsley, finely chopped

1 small bunch of coriander, finely chopped

1 small bunch of mint, finely chopped

1 small bunch of chives or spring onions (green parts), finely chopped

3 tbsp cooked yellow split peas (or Lapeh as we say in Farsi)

2 tbsp sugar

1 tbsp dried mint

Sea salt and chilli flakes to taste

Method

In a large bowl with grated onion, add meat, cinnamon, salt and turmeric. Combine all together well with your hand. Roll meat mixture into small balls. Heat the oil in a saucepan and fry meatballs until brown and set aside.

Pour 5 cups of cold water into a pot. Add pinch of salt and bring it to a boil. Stir in cooked yellow split peas, sugar and rice. Reduce the heat and simmer for 10 minutes.

Then add chopped herbs and fried meat balls and pomegranate juice. Seasoning with salt and chilli flakes. Let it cook until rice is tender.

Meanwhile, heat the oil in a small pan, add 1tbsp dried mint and stir for few second and remove from the heat.

Garnish the soup with mint oil and serve it with bread and butter.

 

آش انارایرانی

آش انار یا انار آشی یکی از آش های خوشمزه و قدیمی هست که در ایران و در فصل سرما تهیه میشه. ستاره ی این غذا دانه‌های زیبا ویاقوتی رنگ انار و آب انار هست. آش انار معمولن با عدس و یا لپه همراه با کوفته ریزه و سبزیجات تازه مثل نعناجعفری … و ادویه های خوش عِطر و طعمی مثل دارچین و زردچوبه تهیه میشه و یک آش کاملن مناسب برای شب یلدا و یا یک روز سرد زمستونی هست.

مواد لازم

دویست گرم گوشت چرخ کرده

یک عدد پیاز رنده شده

یک پیمانه برنج

دو پیمانه آب انار

نصف ق چ دارچین

نصف ق چ زردچوبه

یک دسته ی کوچک نعنا ی خرد شده

یک دسته ی کوچک جعفری خرد شده

یک دسته ی کوچک گشنیز خرد شده

یک دسته ی کوچک تره یا قسمت سبز پیازچه خرد شده

سه ق غ لپه ی پخته شده

دو ق غ شکر

یک ق غ نعنا خشک برای نعنا داغ

طرز تهیه

داخل یک‌کاسه پیاز رنده شده را با گوشت چرخ کرده – نمک – زردچوبه و دارچین مخلوط می‌کنیم و به شکل کوفته های ریز در میاریم. کوفته ها رو داخل تابه سرخ می‌کنیم و آماده نگه می داریم.

پنج پیمانه آب سرد را داخل قابلمه می‌ریزیم و کمی نمک اضافه می‌کنیم . وقتی آب بجوش اومد لپه ی پخته شده – شکر و برنج رو اضافه می‌کنیم. شعله رو کم می‌کنیم و میگذاریم برای ده دقیقه مواد داخل قابلمه به آرامی بپزن.

سبزیجات خرد شده و کوفته ریزه های آماده رو همراه با آب انار به مواد داخل قابلمه اضافه می‌کنیم و کمی نمک و فلفل هم می‌زنیم و میگذاریم تا زمانیکه برنج نرم بشه بپزه.

نعنا داغ رو آماده می‌کنیم و وقتی آش رو سرو می‌کنیم روش نعنا داغ می‌ریزیم و با نون گرم و تازه و کره نوش جان می‌کنیم 🙂

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
