Pan Fried Sumac Kebab کباب تابه ای سماقی

Sumac or as we call it in Farsi, سماق is one of essential spices in Middle East cooking. It is lovely spice with purple colour and lemony taste. In Iranian cuisine, Sumac is used in stews, Kebabs, salads and rice for adding extra flavour and beautiful colour.

Ingredients
200 g ground beef/lamb meat
2 medium onions
2 cooked potatoes
2 tomatoes, cut in half
2 Tbsp plain flour
1 Tbsp ground sumac
½ tsp turmeric
Salt and pepper to taste
Olive oil or any other vegetable oil

Preparation
Grate the onions. Squeeze out of the juice. Add in ground meat , flour, sumac, turmeric, salt and pepper to the grated onions. Combine ingredients together. All the ingredients should be mixed perfectly together and kneaded well. Yes, that’s it! If you pay attention to this important key note, there is no way you can’t make this delicious kabab tabei or pan fried kebab.

Pour some olive oil in a pan.  Place the pan over medium heat. heat the oil and take a portion of meat mixture. Give an oval shape or round shape like burger and , place it in the pan alongside with tomatoes. Cover the pan with a lid. Once the kebaba, starts releasing its juice, uncover the pan and let the juice evaporate. Using a spatula, and flip the kebabs and tomatoes over and let the other side cook as well until it’s brown and well cooked.

Serve these lovely pan fried kebab or Kabab tabei and fried tomatoes with rice or you make a kebab sandwich with flat naan bread, cooked potatoes, fried tomatoes and freshly chopped herbs like spring onions, mint and chives.

کباب تابه ای سماقی

سماق یکی از ادویه های بسیار پرطرفدار در کشورهای خاورمیانه هست . این ادویه با رنگ زیبا و طعم نمکی- ترش مزه و رنگ زیبایی به غذا میده. از سماق در تهیه ی خورش- سالاد – کته – کباب استفاده های فراوانی میشه

دستور غذای امروز کباب دیگی یا همون کباب تابه ای سماقی هست که بسیار آسون تهیه میشه و طعم بینظیری داره که حتمن باید امتحان کنید

مواد لازم

دویست گرم گوشت چرخ کرده گوسفندی یا گوساله

یک عدد پیاز متوسط رنده شده

دو عدد سیب زمینی آبپز شده

دو سه عدد گوجه فرنگی متوسط

دو ق غ ارد

یک ق غ سماق

نصف ق چ زردچوبه

نمک و فلفل تازه اسیاب شده به میزان لازم

روغن زیتون یا کره.

طرز تهیه

پیاز را رنده کرده و آب پیاز را دور بریزید.گوشت چرخ کرده – آرد و تمام ادویه ها را به پیاز اضافه و همه ی مواد را خوب مخلوط کرده و ورز دهید.روغن را در تابه گرم کرده و کباب ها را به شکل مورد نظر درآورده و باگوجه فرنگی ها سرخ کنیداین کباب های بسیار لذیذ را می توانید با کته (مخلوط با ادویه ی پلویی) یا نان و سیب زمینی پخته و گوجه های سرخ شده سرو کنید.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
