Persian Herb Frittata (Kookoo Sabzi)

Kookoo/kuku کوکو (frittata) is a group of Persian meatless (mostly) and sometimes with meat foods that is mixed with eggs. Kookoo is quit easy and quick to make. Kookoo might be something like frittata or herb patties: a mixture of whipped egg with vegetables.

Egg is used as the binding agent and helps all ingredients hold together and do not fall apart.

So if you love egg dishes. This recipe is beyond flavourful .


Kookoo is made with various ingredients : we have eggplant kookoo, potato kookoo , yogurt kookoo and herb kookoo.

Herb kookoo, or kookoo sabzi کوکو سبزی in Farsi, is the most popular and common type of kookoo in Iran. Kookoo is very very easy and quick to make.

Sabzi سبزی means herb in Farsi. kookoo sabzi کوکو سبزی, is a mixture of eggs and fresh/dried or frozen herbs such as parsley جعفری, coriander گشنیز, chivesتره or spring onions پیازجه , dill شوید , spinach اسفناج , and garlic سیر . Traditionally kookoo cooked in a round shape pan on the gas stove but you can bake them in square shape pan and in the oven as well 😊.

Ingredients

100g of each herb including: Parsley, coriander, dill, chives or leek and fenugreek

4 eggs

3  tbsp chopped Walnuts

2 tbsp Barberries ( Zereshk)

4 cloves of garlic, grated

1/2tsp turmeric

1/2 tsp Fenugreek powder, if you have no accesse to fresh Fenugreek herb

2 tbsp flour

1 tsp baking powder

Salt and pepper to taste

Vegetable oil like Olive oil

Method

Remove stems from all herbs. Wash and drain them. Then chop herbs as finely as possible.

Crack the eggs in a bowl and beat eggs with a fork until well blended. then, add chopped hebrs, walnuts, barberries, flour, baking powder, turmeric, grated garlice and season with salt and pepper and mix all ingredients until well combined.

Heat the oil in a non stick pan. Pour kookoo mixture in the pan, spread it in the pan evenly and gently press the herbs batter.

Cover the pan with a lid and let it cook and fried one side for about 10-12 minutes on a medium heat , then flip over and leave to cook other side too.

.kookoo is served either hot or cold as a starter, side dish or a main course, with bread or steamed rice and is accompanied with either yogurt or salad.

کوکو سبزی

کوکو به گروهی از غذاهای ایرانی گفته میشه که بیشتر اوقات از ترکیب تخم مرغ با سبزیجات تهیه میشه ولی گاهی اوقات . کوکو با گوشت نیز پخته میشه.

تهیه کوکو آسان و سریع هست. کوکو در زبان انگلیسی به فریتاتا معروف می باشد.

در تهیه ی کوکوی سبزی معمولن از سبزیجات تازه‌ای مثل جعفری – گشنیز- اسفناج – شوید -تره یا پیازجه- سیر- .. استفاده میشه. به طور سنتی کوکو رو معمولن در تابه های گرد و روی گاز می پزن ولی امروزه در تابه های چهارگوش و داخل فر هم کوکو رو می پزن

کوکو سبزی در بین سایر کوکوها از محبوبیت بسیاری برخوردار هست کوکو سبزی به صورت سرد یا گرم سرو میشود.

مواد لازم

چهار عدد تخم مرغ

صد گرم از هر یک از سبزیجات شامل : جعفری – گشنیز- شنبلیله – تره یا قسمت سبز پیازچه و شوید

دو ق غ گردوی خرد شده

دو ق غ زرشک

دو حبه سیر رنده شده

نصف ق چ پودر شنبلیله در صورت عدم دسترسی به سبزی شنبلیله

نصف ق چ زردچوبه

یک ق چ بیکینگ پودر

دو ق غ آرد

نمک و فلفل به میزان لازم

روغن مایع

طرز تهیه

سبزی ها را پاک کرده- خرد میکنیم و پس از شستن آنهارا خشک میکنیم. .

سبزی کوکورا تا حد امکان میبایست ظریف خرد کرد

تخم مرغ ها را داخل یک کاسه شکسته و با یک چنگال هم میزنیم و بعد سبزیجات خرد شده- سیر- زردچوبه- آرد- بیکینگ پودر- پودر شنبلیله و نمک و فلفل را به تخم مرغ ها افزوده وهمه مواد را با هم خوب مخلوط میکنیم..

روغن رو در تابه داغ می‌کنیم و مایه کوکو رو داخل تابه می‌ریزیم تا کف تابه را پر کند. در تابه را گذاشته تا کوکو روی حرارت متوسط به مدت 12-10 دقیقه سرخ و پخته شود. وقتی یک طرف کوکو پخت – پشت و رو می‌کنیم و سمت دیگر کوکو رو هم سرخ میکنیم.

کوکو سبزی خوشمزه که آماده شد با کته یا با نان و ماست و سالاد سرو میکنیم
