Persian Style Tea (Chai) چای ایرانی

Tea  چای is one of most favourite and popular drinks in all over the world.

Tea is called ‘ Chai چای ’ in Farsi language. It is an imported word from China.

In Iran your day starts with a cup of hot tea and then it continues, I mean, we drink tea during the morning, afternoon and night. And it’s great in cold days of winter time.

Traditionally, tea is served from a samovar, a heating vessel which is imported into Iran from Russia.

In old days, Semavar سماور was most important item in any Persian kitchen but nowadays, a semavar is replaced by electronic tea pot and however making tea in semavar gives lots of flavour and taste to the tea but what to do, c’est la vie.

Before 1900, Persian used to drink coffee but once an Iranian brought some tea seed to Iran and started to cultivat it in north of Iran (Caspian sea).

Tea house, or chaikhaneh چایخانه , is available anywhere in Iran but most of the time tea house is called coffee hosue ( ghahveh khaneh قهوه خانه ).

Iranian tea has variety of flavours with reddish brown colour. Tea or Chai typically served in a ceramic cup and saucer and in some villages served in small beautiful bowls. Chai traditionally served with rock sugar/ nabaat نبات , sugar cubes/ qand قند حبه , honey/ asalعسل, baklava and biscuits. .

چای یکی از مورد علاقه ترین نوشیدنی ها ی معطر در جهان و در ایران هست

چای از گیاهی به همین نام و ازطریق جوشاندن گیاه چای در آب بجوش آمده تهیه میشه.

کلمه ی چای یک کلمه ی واردانی از چین می‌باشد . در ایران معمولن روز همه با چای شیرین شروع میشه یا حداقل میشه گفت شروع میشد و بعد همینطور نوشیدن چای در طی روز ادامه داره.

در زمانهای قدیم برای تهیه ی چای و دم کردن آن از سماور استفاده میشد وسیله‌ای که از روسیه وارد ایران شد. و امروزه قوری

برقی جای سماور نفتی ویا ذغالی رو گرفته.

تا قبل از سال 1900 ایرانی‌ها به نوشیدن قهوه مشغول بودن و در مکان هایی که امروزه هم نامش قهوه خانه هست به نوشیدن بقهوه می پرداختند تا اینکه محمد میرازا کاشف السلطنه در سفری به هند تخم چای

رو به ایران آورد و کشت چای در مزارع شمال ایران رواج پیدا کرد.

امروزه چایخانه های سنتی رو در همه جای ایران میشه مشاهده کرد که همچنان قهوه خانه نامیده میشن.

. ولی چای سنتی در آن‌ها سرو میشود

Iranian cuisine is a combination of rice with meat ( chicken, beef, lamb, fish, turkey), nuts, fruits, dried and fresh herbs and vegetables. Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
