Aubergine Jam مربای بادمجان

Eggplant/ aubergine بادمجان is One of the tastiest jams in the world. Eggplant is called bademjan بادمجان in Farsi. This jam is popular in Iran and Middle East countries. My mother used to make this beautiful jam and maybe you say aubergine jam??, I have never heard about it or never tried it??!!!!! BUT if you try once, you will know what I am talking about..

It’s just awesome jam; with simple ingredients you can have such a gorgeous aubergine jam with cinnamon taste. It is pretty easy to make.

Ingredients

500g eggplant
500g sugar
500ml water
2tbsp fresh lemon juice
1tsp cinnamon
1/2tsp cardamom powder

Preparation

Peel eggplants off. Dice them into small cubes or lengthwise.
Place them in a pot and cover with water. Let it boil for10 minutes, it will cause all bitterness of eggplants comes out. After 10 minutes, use a colander and drain the water.

Next, add sugar and 500ml water in a pot and dissolve the sugar in water and bring it to a boil. then, add eggplants and let it simmer for 30 minutes.

After 30 minutes, add cinnamon, cardamom and lemon juice to the pot. Give a soft stir and cook it for 30-40 minutes on a medium to low heat until reach to consistency.

Then remove from the heat and allow to cool. Store it in glass jar and refrigerate it .

In serving time, garnish with chopped pistachios or walnuts and add it to slices of buttery toast and try it. super tasty. .

مربای بادمجان

یکی از خوشمزه ترین مرباها با طعمی متفاوت هست که در ایران و کشورهای خاورمیانه طرفدار داره. این مربای ترد- زیبا-شیشه ای و بسیار خوشمزه با طعم دارچین و هل رو تا نچشید باورتون نمیشه چقدر عالیه. با مواد خیلی کم و بسیار سریع و آسان تهیه میشه.

مواد لازم

پانصد گرم بادمجان ریز درسته یا بادمجان درشت خرد شده

پانصد گرم شکر

پانصد میلی لیتر آب

دو ق غ آب لیمو ترش

یک ق چ دارچین

نصف ق چ هل

طرز تهیه

پوست بادمجان ها رو گرفته و به صورت مربع های کوچک یا طولی خرد کنید.

بادمجان ها را در مقداری آب به مدت ده دقیقه بجوشانید- با این کار تلخی بادمجان ها گرفته میشود. سپس بادمجان را داخل آبکش ریخته و اب جوشیده شده را دور میریزیم.

شکر را با آب داخل قابلمه ریخته و روی حرارت قرار دهید تا شکر حل شود. .

وقتی شربت بجوش آمد- بادمجان ها را اضافه کرده و به مدت نیم ساعت میگذاریم که روی حرارت ملایم قرار داشته باشد. بعد از نیم ساعت- آبلیمو و هل و دارچین را هم به مربا افزوده و بگذارید روی حرارت ملایم به مدت تقریبن نیم ساعت تا چهل دقیقه مربا پخته شده و به قوام و غلظت برسد.

بعد از پخت ظرف مربا را از روی حرارت برداشته و بگذارید تا مربا سرد شود و در بطری های شیشیه ای استرلیزه و تمیز قرار داده و در یخچال نگهداری نمایید. این مربا را میتوان برای چند ماه داشت و زمان سرو روی آن پسته یا گردوی خرد شده اضافه کرد و روی نان کره دار اضافه کرده و نوش جان کنید…
