Elephant ear (Gosh feel )

Elephant ear pastries ( goshe feel) is traditional deep fried pastry in Iranian cuisine. Gosh-e feel Made by shaping dough into the elephant ear shape.

Ingredients for dough
4 cups flour
5 eggs
1 cup warm milk
½ cup vegetable oil
1 Tsp baking powder
Pinch of salt
Ingredients for syrup
3 cups sugar
3 cups hot water
1 lemon juice
Pinch of saffron

Preparation
Crack the eggs in a big bowl. Add baking powder, pinch of salt and vegetable oil. Mix altogether.
Add plain flour and mix. At the end add warm milk, Combine all ingredients well. Cover the bowl and Leave the dough to rest for 30 minutes.


Meanwhile, prepare the syrup. In a pan with hot water, add sugar and dissolve it. Squeeze the lemon juice . Add pinch of saffron. Boil the syrup on medium to high heat for 10 minutes.

After 30 minutes, make 4 dough balls.
Sprinkle some flour on the surface board. Make thin and flat one of the doughs. Using a large cutter and cut them in circle shape. Pinch half the circle as you see in the photo.
Hot the oil in a pan. Fry in hot oil for 2-3 minutes.
Put them in the syrup for 1-2 minutes and topped with chopped pistachios.

 

گوش فیل
گوش فیل نوعی شیرینی ایرانی هست که همراه با زولبیا و بامیه معمولن در ماه مبارک رمضان بیشتر تهیه و مصرف میشه. شکل این شیرینی چون تقریبن شبیه به گوش فیل هست به این نام معروف شده.

مواد لازم

چهار پیمانه آرد سفید

پنج عدد تخم مرغ

یک پیمانه شیر گرم

نصف پیمانه روغن مایع

یک ق چ بیکینگ پودر

کمی نمک

مواد لازم برای شربت

سه پیمانه شکر

سه پیمانه آب گرم

یک عدد لیمو ترش

کمی زعفران

طرز تهیه
تخم مرغ را داخل یک کاسه ی بزرگ بشکنید. بیکینگ پودر و کمی نمک و روغن را به تخم مرغ اضافه و با هم خوب مخلوط کنید. سپس آرد را به مخلوط بالا اضافه کنید و کمی هم بزنید و در آخر شیر گرم رو به خمیر اضافه و همه ی مواد را هم بزنید تا خوب با هم ترکیب بشن.
روی ظرف رو بپوشونید و بگذارید برای نیم ساعت استراحت کنه.
در این میان شیربت لازم برای گوش فیل رو تهیه می کنیم.
داخل یک قابلمه شکر رو با آب گرم هم می زنیم تا شکر آب بشه. آب لیمو ترش رو همراه با زعفران به شیره اضافه می کنیم. می گذاریم شربت روی حرارت متوسط رو به بالا برای 10 دقیقه بجوشه.
بعد از نیم ساعت خمیررو روی سطح آردی قرار بدید و به 4 خمیر توپی تقسیم کنید. با این خمیر آماده شده می تونید مقدار بسیار زیادی گوش فیل تهیه کنید.
یکی از خمیرها رو روی سطح آردی با وردنه باز کنید و به صورت یک ورقه ی نازک در بیارید. با یک قالب گرد خمیر رو برش بدید .
یک طرف دایره رو با انگشت جمع کنید تا چین بخوره ( مثل تصویر روبرو).
روغن رو در یک قابلمه داغ کنید. و خمیرهای دایره شکل رو برای 3-2 دقیقه سرخ کنید تا برشته و طلایی بشن و بعد از روغن خارج کنید و روی صافی بگذارید تا روغن اضافی خارج بشه و بعد برای 2-1 دقیقه داخل شربت بگذارید تا شیره رو بخودشون بگیرن و بعد کمی پسته ی خرد شده و پودر هل روی گوش فیلها بریزید.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
