Fruit soup (Ash-e Meveh)

This is a traditional and hearty sweet-sour soup (aash) with either dried fruits such as prunesآلو , apricotsقیسی , tasty tiny meatballs کوفته ریزه, a little bit of spices, apple cider سرکه  or grape vinegar and sugarشکر.
My mother used to make this delicious soup (Aash) in special occasions.

Ingredients
½ cup rice
1/3 cup cooked yellow split peas
¼ cup sugar
¼ cup vinegar
2 medium onions, peeled
3-4 apricots for per person
3-4 prunes for per person
½ tsp turmeric

1tbsp dried mint
Pinch of Salt and chili flakes to taste
Vegetable oil

Ingredients for meatballs
150g ground lamb or beef
½ onion, grated
Salt and pepper to taste

Instructions
Mix minced meat with grated onion. Season with salt and pepper. Give meatballs shape to the meat.
Heat a frying pan and cook the meatballs for about 10 minutes and until brown in 2 tablespoons of oil.
Finely chop one of the onions . Set aside.Thinly slice remaining of the onion and fry in a pan . Keep it for garnishing.

Bring the water to a boil. Add rice, yellow split peas, chopped onion, prunes, apricots, turmeric, sugar, vinegar, oil. Simmer for 10 minutes.

Mix in the cooked meatballs. Partially cover the pot and simmer for 20 minutes.
Once it is cooked, remove from the heat. Taste and adjust sugar or vinegar to your liking. Set it for few minutes all flavour come together.
Ladle into bowls, garnish with fried onions and fried mint . Serve it warm

آش میوه ی اردبیلی
این آش میوه ی سنتی – اشتها آور و خوشمزه مربوط به آذری های  ایران میشه. این آش رو میشه با میوه های تازه و یا خشک مثل آلو – قیسی- آلبالو – کمی ادویه – سرکه – شکر- و کوفته قل قلی های سرخ شده تهیه کرد. دستور پخت های مختلفی برای این آش هست و این هم دستور آش میوه ی من هست که درموقعیت خاص پخته میشه..

مواد لازم

نصف پیمانه برنج

یک سوم پیمانه لپه ی پخته

یک چهارم پیمانه شکر

یک چهارم پیمانه سرکه

دو عدد پیاز متوسط

سه چهار عدد قیسی برای هر نفر

سه چهار عدد آلو بخارا برای هر نفر

نصف ق چ زردچوبه

یک ق غ نعنا خشک

نمک و فلفل به میزان لازم

روغن مایع

مواد لازم برای کوفته

صدوپنجاه گرم گوشت چرخ کرده گوسفند یا گوساله

نصف پیاز رنده شده

نمک و فلفل به میزان لازم

طرز تهیه

گوشت چرخ کرده را با پیاز رنده شده – نمک و فلفل مخلوط کنید و به صورت کوفته های ریز در آورید. کوفته ها را با دو ق غ روغن برای 10 دقیقه بپزید تا قهوه ای رنگ بشوند.
یکی از پیاز ها را ریز خرد کنید.
باقیمانده ی پیاز را خلالی خرد و سرخ کنید و برای تزیین روی آش نگه دارید.
آب را بجوش بیارید. برنج – لپه – پیاز خرد شده- آلو- قیسی- زردچوبه – شکر –سرکه و کمی روغن به داخل قابلمه اضافه کنید. بگذارید برای 10 دقیقه با حرارت ملایم بپزد. بعد از این مدت کوفته های پخته را اضافه کنید. در قابلمه را نصفه بگذارید و برای 20 دقیقه بپزد.
زمانیکه آش حاضر شد از روی حرارت برداشته و با توجه به ذائقه ی خودتان شکر و سرکه را اندازه کنید.
آش را در ظرف های مورد نظر سرو و با پیاز و نعنا داغ تزیین کنید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
