This noodle soup آش رشته is popular in Ardebil, a beautiful city in NW of Iran. It has a sour/sweet taste due to vinegar and prunes in it. Noodle is called reshteh رشته in Farsi language. One of our most famous and popular soup/aash in Iran is called Aash-e Reshtehآش رشته which is made with fresh herbs, noodles, legumes and for topping we add kashk کشک( whey) and mint sauce. But Ardebili noodle soup is differet due to ingredients. In Ardebili version of noodle soup, there is no herbs in it, but there is meat balls, prunes and vinegar, which gives a savoury taste to the soup and for topping you just need mint sauce. This is a noodle soup with legumes, meat balls, caramelize onions and dried mint sauce.
Ingredients
200g Persian noodles ( if it is not available you can use egg noodles instead of Persian noodles)
1 large onion or 2 small ones
200g ground beef
2 cups of cooked lentils, chickpeas and pinto beans
1 cup prunes
2 Tbsp plain flour
½ cup apple cider or grape vinegar
Salt- black pepper to taste
1Tbsp dried mint
1 Tsp turmeric
Oil
Preparation
In a big pot with 8cups of water, add flour and bring it to a boil. Mix ground meat with one of grated onions. Combine together. Give small balls shape to the meat and fry them until they are brown.
Finely chop second onion and fry until golden. Keep some for the garnishing and use remaining for mixing with the soup.
Once water started to boil, add cooked cereals, all spices, prunes, oil, vinegar, fried onion, noodles, and meat balls. Cook it on low heat until soup is thick.
For the garnishing the soup, fry dried mint and garnish with fried mint and fried onion.
آش رشته ی اردبیلی
این آش در اردبیل بسیار معروف می باشد و به اریشته آشی یا آش رشته معروف هست . برخلاف آش رشته های دیگر از سبزی و کشک در این آش اثری نیست و با حبوبات – کوفته قل قلی- سرکه و آلوچه تهیه میشه و لی همچنان خوشمزه هست . به علت استفاده از سرکه و آلو مزه ی ترش/شیرین داره. مزه ی این آش حتی خیلی خوشمزه تر میشه اگر برای یکی دوروز دیکه باقی بمونه( البته اگر چیزی بمونه چون واقعن خوشمزه هست). این آش رو می تونید در هر زمانی تهیه کنید ولی در مناسبت های مذهبی مثل ماه محرم و ماه مبارک رمضان بیشتر تهیه میشه.
مواد لازم
دویست گرم رشته آشی
دو عددپیاز درشت
دویست گرم گوشت چرخ کرده
دو پیمانه حبوبات پخته شامل: عدس نخود و لوبیا چیتی
یک پیمانه آلو ی خشک
نصف پیمانه سرکه
دو ق غ ارد
یک ق چ زردچوبه
یک ق غ نعنا خشک
نمک و فلفل به میزان لازم
روغن
طرز تهیه.
داخل یک قابلمه با 8 پیمانه آب – آرد را اضافه کرده و با هم مخلوط کنید و بگذارید تا آب به جوش بیاد. گوشت چرخ کرده را با یک پیاز رنده شده مخلوط و به صورت کوفته های ریز در بیارید و در کمی روغن سرخ کنید.
پیاز دوم را خرد کرده و سرخ کنید تا طلایی بشه. کمی از این پیاز رو برای تزیین روی آش نگه دارید و باقی را به آش اضافه کنید.
زمانیکه آب بجوش آمد- حبوبات پخته – تمام ادویه ها- آلو- روغن – سرکه – پیاز سرخ شده – رشته و کوفته قل قلی ها را به آب جوش اضافه کنید. با حرارت کم بگذارید بپزه تا زمانیکه غلیظ بشه و جا بیفته.
نعنا خشک رو هم کمی تفت بدید و با پیاز داغ برای تزیین آش استفاده کنید.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother.
Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
