This is a rich, hearty and spicy chicken soup that would make your cold winter evening very warm 🙂

Ingredients
2 skinless and boneless chicken breast or thighs
1 sheet of egg noodles
1 small red bell pepper
Small piece of fresh ginger root, chopped lengthwise
2 garlic cloves, finely chopped
1 bunch scallions, sliced green part and white part separately
1 cup coconut milk powder
1 tbsp light soy sauce
50g green peas
3 cups water
Salt and pepper to taste
Oil

Method
Heat the oil in a saucepan, add diced chicken to the pan and fry for 5 minutes and stirring until golden. Add ginger, garlic, bell pepper and white part of spring onions to the chicken and fry for 2-3 minutes.
Stir in water, coconut milk powder, soy sauce, noodles in a pot and season with salt -pepper, bring it to a boil. Then add fried ingredients, green peas and green part of spring onions and cook for 10 minutes. Stirring occasionally.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother.
Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
