Naan Khataaei نان خطایی

Naan khaataei نان خطایی یا نان خطائی is a kind of buttery cookies. According to wikipedia, Naan is a Persian word for bread and Khataaei is an Afghan word for biscuit. It is popular in India and Pakistan. In NE of Iran these biscuits are called kulcha khataaei کلوچه خطایی.

Naan khataaei can be easily prepared at home. They are deliciously sweet and crunchy cookies.

Ingredients

1 ¼ cup all purpose flour

¼ cup gram flour

1 ½ cup semolian

1 cup ghee ( or unsalted butter)

1 cup powdered sugar (icing sugar)

3tbsp ground almond

1tsp cardamom

Instruction

Preheat the oven to 176C.

Mix powdered sugar with ghee in a bowl. Then add flour, semolina and cardamom to butter mixture and combine it.

Using your hand, knead the dough for 5 minutes. Take a small dough ball in your hand. Flatten them.

Grease a baking tray with oil. Place them on the tray. To make the glazing top of the cookies, we need an egg yolk.

Rub egg yolk top of the cookies. Bake them for 12-15 minutes.

Remove from the oven and let them to cool. Serve with a good cup of tea or coffee. You can store them in a container for about 2 weeks.

نان خطایی

نان خطایی یا نان خطائی یک نوع بیسکویت کره ای هست. بر طبق نوشته‌های ویکی پدیا- نان خطایی از ترکیب کلمه ی پارسی (نان) و کلمه ی افغانی (خطایی) به معنی بیسکویت گرفته شده است. 
نان خطایی در هند و پاکستان بسیار محبوبیت دارد. این نان در شمال شرق ایران به کلوچه ی خطایی معروف است. 
نان خطایی بسیار آسان و فوری در منزل تهیه شده و شیرینی‌ بسیار خوشمزه و تردی می باشد. 

مواد لازم

یک و یک چهارم پیمانه ارد

یک چهارم پیمانه ارد نخودچی

یک و یک دوم پیمانه آرد سمولینا

یک پیمانه کره

یک پیمانه پودر قند

یک ق چ پودر هل

طرز تهیه

فر را با حرارت ۱۷۶ درجه ی سانتیگراد گرم کنید. داخل یک‌ کاسه پودر قند را با روغن یا کره خوب هم می‌زنیم تا مخلوط شوند.

سپس آرد شیرینی پزی – آرد سمولینا و پودر هل را به مخلوط پورد قند می افزاییم و با استفاده از دستهامون همه ی مواد را با هم برای ۵ دقیقه ورز می‌دهیم تا خمیر نرمی داشته باشیم..

به اندازه ی یک نارگیل از خمیر بر می‌داریم و با دست به آن شکل پهن شده می‌دهیم:مطابق تصویر

سینی پخت کیک را روغنی می کنیم.

بیسکویت های شکل داده شده را داخل سینی می چینیم. برای براق کردن سطح بیسکویت ها – یک زرد ه ی تخم مرغ را روی بیسکویت ها می مالیم. سینی را داخل فر گذاشته تا برای ۱۵-۱۲ دقیقه بپزند

بیسکویت های آماده شده را از فر خارج می‌کنیم و اجازه می‌دهیم خنک شوند. این بیسکویت های خوشمزه را با یک فنجان چای یا قهوه ی داغ میل کنید. میتوان بیسکویت ها را برای حدود دو هفته در یخچال نگه داری نمود.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
