pitta bread (Naan)

Naan is a kind of bread which is very important part of cuisines in the Middle East. In Iran we have different types of bread (Naan) which in my previous posts I have shared several recipes for Persian flat breads naan.

 

Yesterday I baked these beautiful Pitta breads which is very popular in the Mediterranean and Middle Eastern cuisines and resembles to Iranian flatbread ( Taaftun bread naan).

If you want to taste pitta bread, so try this simple -quick dough. This home made pita breads are fluffy, soft, flat, easy to make and easy to eat 🙂

equally goes well with kebab, falafel, dip aubergine, burgers and sandwiches…

Ingredients

350g strong flour

1tsp salt

160ml warm milk

80ml warm water

1tsp active dry yeast

1tsp sugar

1tbsp Olive oil+ extra for baking

Method

Combine milk- water, sugar and yeast in a bowl. Cover the bowl and let to rest for 15 minutes. After 15 minutes add 1tbsp olive oil to the yeast mixture.

In another bowl, mix flour with salt and dried or chopped fresh herbs. Add the yeast mixture to the flour and combine well.

Transfer the dough on a floured surface and knead for 5 minutes until you have a smooth dough.

Brush the bowl with some oil and add the dough . Cover it with a kitchen towel and let to proof for 1 hour until doubled in size.

Place the dough on a floured surface. Press on the dough to remove the air and divide it into 5 equal sized pieces.

Using a rolling pin, and roll out each piece of dough to a circle shape as you see in the photo.

Heat the oil in a pan, and cook the pita bread for 2 minutes on each side in the pan until they puff up , as you see in the photo.

Serve it with kebab, or chicken, cheese and herbs. Soooooo tasty bread.

 

نان پیتای یونانی

نان یکی از اجزای مهم در رژیم غذایی کشورهای خاورمیانه و مدیترانه ای هست. من در چند پست قبلی‌ام طرز تهیه ی نان بربری – تافتون و سنگک رو به اشتراک گذاشتم . دیروز این نان‌های پیتا رو درست کردم که خیلی شبیه به نان تافتون خودمون هست فقط با این فرق که برای پخت این نان از شیر هم استفاده میشه.

نان پیتا یک نوع نان مسطح و گردی هست که در یونانلبنانو کشورهای عربی پخت میشه.

اگر دوست دارید مزه ی نان پیتای واقعی رو بدونید این دستور ساده و سریع را امتحان کنید. این نونهای پیتا خیلی نرم و لطیف هستن. خیلی آسون تهیه میشه و اینقدر خوشمزه هستن که فوری هم خورده میشن. ولی اگر اضافه اومد میتونید فریز کنید و هر وقت خواستید فوری در فر گرمش کنید و هنوز هم مثل نون تازه عِطر و طعمش باقی میمونه. از نان پیتا میشه با کبابمرغفلافلکشک بادمجان یا انواع ساندویچ استفاده کرد.

مواد لازم

سیصدوپنجاه گرم آرد نانوایی

یک ق چ نمک

صدوشصت میلی لیتر شیر ولرم

هشتاد میلی لیتر آب ولرم

یک ق چ مخمر فوری

یک ق چ شکر

یک ق غ روغن زیتون + کمی برای پخت نان

طرز تهیه

داخل یک‌کاسه شیر ولرمآب ولرمشکر و مخمر فوری را هم می‌زنیم تا مخمر حل بشه و بعد روی ظرف را می پوشانیم و میگذاریم برای 15 دقیقه بمونه تا مخمر فعال بشه و بعد یک ق غ روغن زیتون اضافه می‌کنیم و مایع مخمر روهم میزنیم.

سیصدوپنجاه گرم آرد را با یک ق چ نمک و یک ق غ سبزی خشک مورد علاقه اتون که من اینجا از شوید خشک استفاده کردمهم میزنیم و بعد مایع مخمر رو هم به مخلوط آرد اضافه کرده و همه ی مواد رو با هم مخلوط می‌کنیم.. روی میز کمی آرد می‌ریزیم وخمیر رو برای 5 دقیقه خوب ورز میدیم تا منسجم و یکدست بشه.

داخل کاسه کمی روغنی می‌کنیم و خمیر آماده شده رو داخل کاسه گذاشته وبرای یک ساعت روی اون را می پوشانیم تا خمیر پف کنه.

وقتی خمیر آماده شد روس سطح کار کمی آرد پخش می‌کنیم و خمیر رو به پنج قسمت تقسیم می کنیم.

یکی از گلوله های خمیر رو با وردنه باز می‌کنیم مطابق تصویر. داخل تابه ی نچسب کمی روغن می‌ریزیم و خمیر رو داخل تابه قرار داده و ه روی خمیر رو برای دو سه دقیقه می پزیم.

باقی گلوله خمیرهارو هم به همین ترتیب آماده و می پزیم. انصافن نان‌های خیلی خیلی خوشمزه ای هستن. می تونید در فریزر هم نگه دارید و موقع نیاز فوری داخل فر گذاشته و گرمش کنید. مزه ی عالیی دارن..
