Some people do not like Spinach/esfenaj اسفناج and even they do not give a chance to themselves to taste it, but with this recipe you will have very delicious sauteed Spinach with garlic yogurt dip. It is incredibly simple and light meal but yet delicious and flavorful. This is one of the most tastiest spinach dish that you ever tried. This is my mothe’s r recipe and with this recipe many people converted to spinach eaters 😂😂 and she is very proud of that.
Most important spice for this dish is turmeric with nice orange colour,that is called ‘Zard Chobe زردچوبه’ in Farsi language. Taste and colour of beautiful turmeric not only brings a lovely aroma and colour to the dish but also it’s an anti-inflammatory.

This is my mother’s recipe and Let me tell you a sweet memory from my mother about this spinach dish. In Iranian tradition, when we cook a dish, the food smell might goes out of house and your neighbours smell it. And we believe we should share some of that meal with neighbours, with the idea that , maybe they want to try the dish, but it is not possible for them to make it, so we share it freely with them. sometimes when my mother cooked this spinach dish, shared it with friends or neighbours and believe me or not, she converted many many people to a spinach lover with this recipe, she changed their mind and she was very proud of that.
Ingredients
500 g Spinach leaves
1 large onion
2 cloves of garlic, grated
4 tbsp cooked yellow split pea
1/2 cup cooked rice
1/2 cup plain yogurt
1 tsp turmeric
salt and pepper to taste
Butter or vegetable oil

Place the washed leaves in a pot, add 50 ml cold water . Cover the pot with a lid and Cook it for 3 minutes over a medium heat. Then stirring with a wooden spoon and cook it for another minute until all the spinach is wilted. Remove it from the stove. As Spinach releases a lot of water as it cooks, place the cooked spinach in a colander and squeeze to get rid of extra water. and let cool down. Then chop it finely..
Peel and finely slice onion. Melt butter in a saucepan over medium heat and add onion. When onion goes golden, add Spinach, cooked rice, fried onion and yellow split peas. Season with salt, turmeric and pepper. Mix well all ingredients together. Cook it for 10 minutes over a low heat.
Meanwhile in a bowl with yogurt, add grated garlic. Combine together. Place yogurt dip in a plate and pour some Spinach top of it. It is very yummy with a slice of bread.
