Kotlet (Persian Meat Patties)

Cutlet/ Kotlet کتلت is an Iranian version of meat patty. It is combination of ground beef with potatoes (whether cooked or raw), split peas لپه , Fava beans باقالا خشک , onions and spices. They are incredibly tasty. The traditional shape of cutlet is oval but you can make it in round shape as well. They are incredibly tasty.
Persian meat patties or cutlet might be served warm or cold. You can serve it with flat bread or make a beautiful cutlet sandwich with baguette bread.

Ingredients
400g ground beef
1 medium onion, grated
200g Fava beans, cooked and mashed
1 egg
Salt- pepper powder to taste
1 tsp turmeric
Bread crumbs
Oil


Preparation

Mash cooked fava beans. Grate onion, squeeze out of the juice. Add ground beef, mashed fava beans, grated onion, egg, salt- pepper and turmeric to a big bowl. Mix thoroughly until well blended.
Now, take a small portion of meat mixture and put in the palm of your hand and shape them.
Then roll gently in bread crumbs. Repeat will remains of meat mixture, once they are ready, heat the oil in a pan. Oil should be hot and sizzle. Put  cutlette  in the pan. Let fry one side, flip over to fry other side until golden brown

کتلت یکی از غذاهای لذید وپرطرفدارایرانی می باشد که بسیار آسان تهیه می گردد وترکیبی خوشمزه از گوشت چرخ کرده گوساله- گوسفندی و یا ترکیبی از هر دو همراه با پیاز- سیب زمینی خام یا پخته و ادویه ها می باشد.
کتلت را بیشتر به شکل گرد یا بیضی تهیه می کنند. این غذای عالی را میتوان به صورت سرد یا گرم با نان یا به صورت ساندویچ سرو کرد.

مواد لازم

چهارصد گرم گوشت چرخ کرده

یک عدد پیاز رنده شده

دویست گرم باقالای خشک پخته و کوبیده شده

یک عدد تخم مرغ

یک ق چ زردچوبه

نمک و فلفل به میزان نیاز

آرد سوخاری

روغن زیتون

طرز تهیه

باقالای پخته شده را خوب بکوبید تا به صورت یک خمیر یکدست در آید.. پیاز را رنده کرده و آب پیاز را گرفته و دور بریزید. گوشت چرخ کرده-باقالای کوبیده- پیاز رنده شده – تخم مرغ –

نمک – فلفل و زردچوبه را داخل یک کاسه ریخته و خوب ورز دهید تا همه ی مواد خوب با هم مخلوط شوند.

به اندازه ی مناسب از مخلوط گوشت را در کف دست گذاشته و شکل مورد نظر را به آن دهید. سپس در پودر نان خشک بغلطانید

روغن را در تابه داغ کنید و کتلت های آماده شده را در روغن سرخ کنید

Iranian food is a celebration of flavor, colour and spices such as: saffron, cinnamon, cardamom, turmeric, dried rose petals, dried limes, cumin, .... I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
