Sabzi Polo Ba Mahi سبزی پلو ماهی

Sabziسبزی in Farsi language refers to green herbs and poloپلو means rice. Sabzi polo سبزی پلو is an Iranian rice dish with freshly  chopped herbs such as dillشوید, parsley جعفری, corianderگشنیز, chives تره, garlic سیر .. . that is served with  crispy fried fish (mahi ماهی) or Persian herbs frittata (kookoo sabzi کوکو سبزی).

Herb rice with fish or kookoo sabzi is one of the two main dishes that are  traditionally served in Iranian new year (Nowruz نوروز). The other main dish for new year is called : Reshteh polo رشته پلو or rice with toasted noodles.

Ingredients for the rice

  • 3 cups rice
  • 200 g mixed herbs ( parsley, coriander, dill,chives or green part of spring onions), finely chopped and washed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 2 large cloves of garlic , peeled and grated
  • Salt to taste
  • Thin Lavash bread or Tortilla bread for tahdig
  • Vegetable oil/ butter or Ghee

Ingredients for fish

  • 1-2 pieces of Salmon/ white fish/ Sea bass fillets or your choice of fish
  • 4 Tbsp plain flour
  • ½ Tsp turmeric
  • 1 egg
  • 1 tbsp saffron water
  • 4 tbsp bread crumbs
  • Salt-and ground black pepper to taste
  • 1 lemon or lime
  • Vegetable oil

Preparation of the rice
Before washing rice, remove husk from rice grains. Then, Wash the rice 2-3 times with cold water. Drain water to get rid of starch and until water is clear. In a bowl with cold water, add rice and 1tbsp salt and let the rice soak for about 1 hour.
Add water to a pot and bring it to a boil (For each 1 cup of rice we need 4 cups of water. ). Drain the soaked rice and transfer it into the boiling water. Allow to cook the rice for 7 minutes in high flame and once or twice stir the rice, so that rice grains do not clump to each other. After 7 minutes, add mixture of chopped herbs and grated garlic to the rice and let it cook for 3 minutes more. Then use a colander/strainer and drain the rice.

Add good amount of oil to the pot . Put one slice of a tortilla bread on the bottom of pot. Now, put half of the rice over the bread, sprinkle some ground cinnamon and cardamom.

Then add remaining of the rice. Finally place small pieces of butter top of the rice. Make 2-3 holes in the rice to allow steam to escape.  wrap the lid with a kitchen towel to absorb all moisture and cover the pot with lid. Place heat diffuser top stove and set the pot on it and cook the rice on low heat for about 30 minutes. Once you want to serve the rice, you can put a plate on the pot and invert it, so you can have your tahdig or crispy crust on top.

Preparation of the fish

In a plate mix flour with turmeric, salt and pepper. Crack the egg in a bowl, add 1tsp saffron water and season with salt and pepper. Beat the egg.

Coat both sides of the fish with flour, and shake off any excess. Then, dip in the  beaten egg and at the end coat with bread crumbs. Heat some oil or butter in a pan and Fry fish fillets in the pan, about 5 minutes each side. Once the rice is ready let rest for 5 minutes and serve it with crispy fried fish).


Dish is ready. So so sooooo  delicious , healthy and aromatic.

سبزی پلو با ماهی شب عید

سبزی پلو یک غذای ایرانی می باشد که از ترکیب برنج با سبزیجات خرد شده ی معطری همچون شوید- جعفری – گشنیز و تره و سیر تهیه میشود. این غذا به صورت سنتی با ماهی و گاهی با کوکو سبزی سرو میشود.

سبزی پلو با ماهی یکی از غذاهای سنتی ما ایرانیان برای شب عید میباشد.

مواد لازم برای پلو

سه پیمانه برنج

دویست گرم سبزی پلویی شامل: جعفری – گشنیزتره یا قسمت سبز پیازچه و شویدشسته و خرد شده

دوحبه سیر درشت – رنده شده

نصف ق چ پودر دارچین

نصف ق چ پودر هل

نمک به میزان لازم

نان برای ته دیگ

روغن مایع و کره

مواد لازم برای ماهی

دویست گرم ماهی سفید

چهار ق غ آرد

نصف ق چ زردچوبه

یک عدد تخم مرغ

یک ق چ زعفران دم کرده

چهار ق غ آرد سوخاری

نمک و فلفل به میزان لازم

یک عدد لیمو ترش

طرز تهیه پلو

برنج پاک کرده و آن را سه چهار مرتبه با آب سرد شسته تا کاملن نشاسته موجود در آن رفته و اب برنج شفاف شود . سپس برنج را در کاسه ی پر از اب همراه با یک ق غ نمک برای 1 ساعت بخیسانید. در یک قابلمه آب را بجوش آورید. برای هر یک پیمانه آب نیاز به چهار پیمانه اب میباشد.

آب نمک برنج را دور ریخته و برنج را داخل آبجوش ریخته و بگذارید به مدت 7 دقیقه بجوشد. سپس مخلوط سبزیجات خرد شده و سیر رنده شده را به برنج اضافه کرده و 3 دقیقه ی دیگر برنج را بجوشانید. سپس داخل آبکش بریزید.

مقداری روغن در قابلمه ریخته و نان لواش را داخل قابلمه بگذارید. اگر اندازه ی نان بزرگتر از کف قابلمه باشد ته دیگ زیبای کلاهی شکلی خواهید داشت. سپس مقداری از برنج آبکش را روی نان ریخته و پودر هل و دارچین روی برنج بپاشید و سپس باقی برنج را ریخته و مجددن پودر دارچین- و هل روی برنج برییزید. مقداری کره روی برنج قرار دهید . با دسته قاشق دو سه حفره در برنج درست کنید تا بخار حاصل در حین پخت از حفره ها خارج شود. و بگذارید روی حرارت متوسط به مدت تقریبن نیم ساعت دم بکشد.

طرز تهیه ماهی

در یک بشقاب بزرگ آرد سفید را با زردچوبه و کمی نمک و فلفل مخلوط کنید. در یک پیاله نیز تخم مرغ را با آب زعفران و نمک و فلفل مخلوط نمایید. حالا- ماهی را اول در ظرف آرد قرار داده و پشت و روی آن را با آرد بپوشانید. سپس در مخلوط تخم مرغ و زعفران قرار دهید و در آخر با آرد سوخاری پوشش دهید. در تابه مقداری روغن را گرم کنید. هر سمت ماهی را 4 دقیقه سرخ نمایید.

این سبزی پلو فوق العاده لذید و خوش عطر و بو را با ماهی و کوکو سبزی و لیمو ترش سرو کنید.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
