Iranian Rice Pilaf with Milk (Sutti Pilow)

This meal is called : milk rice pilaf سوتی پیلو. This rice pilaf is cooked with milk rather than with water. This is a traditional rice pilaf in Ardebil اردبیل and Tabriz تبریز for Nowruz نوروز and Chaharshanbeh Suri چهارشنبه سوری . It is made with milk شیر and saffron water/steamed saffron آب زعفران. It served with beautifully fried raisins کشمش and dates خرماin butter, cinnamonدارچین and saffronزعفزان ایرانی. In some recipes it can be served either  with smoked fish ماهی دودی, that is just yum or with raisins and dates. Despite what you might think, this is not a pudding. It is a beautifully done rice meal, garnished with cooked separately raisins and dates. In Azerbaijani language milk is called Sut سوت. that’s why it is called sutti pilow.

The following rice piaf with milk سوتی پیلو is popular in Ardebil اردبیل, an ancient and beautiful city on neighbouring Caspian seaدریای مازندران. Ardebil is known for it’s trade in honey from Sabalan mountains کوههای سبلان, carpet and amazing landscapes. Twenty four sites in Iran are inscribed on the list of the World Heritage sites (UNESCO یونسکو). One of them is located in Ardebil.

Ingredients

2 cups rice

2 cups milk

1 ½ cups water

1 cup Dates

1 cup raisins

3tbsp butter

2tbsp vegetable oil

1tbsp Persian saffron water

1tsp cinnamon powder

½ tsp turmeric

Method

Rinse the rice. Pour all milk, water, rice and 2tbsp butter and vegetable oil into a pot. Bring it to a boil. Reduce the heat to low. Add turmeric and Saffron water. Give a stir. Allow the rice to cook.

Meanwhile, melt the butter in a small skillet, add raisins, cinnamon powder and saffron water. Sauté for 2-3 minutes until softened. Then remove from the heat and do same process with Dates.

Serving milky rice with fried raisins and dates. If you like add a pad of butter to rice and give extra richness.

سوتی پلو

این غذا شیر پلو نام دارد و در پخت برنج از شیر بیشتر از آب استفاده میشود. شیر پلو یکی از غذاهای سنتی در اردبیل و تبریز میباشد که بیشتر به مناسبت چهارشنبه سوری و یا عید نوروز تهیه میشود.

شیر پلو با شیر و آب زعفران تهیه میشود و زمان سرو با خرما و کشمش تفت داده در کره سرو میگردد. در بعضی از دستور تهیه ها این غذا با ماهی دودی نیز سرو میشود. شاید فکر کنید شیر پلو یک نوع دسر شیرین میباشد ولی برعکس این تصور- شیر پلو یک غذای بسیار خوشمزه برنجی بوده که با خرما و کشمش که جداگانه سرخ شده و با هم سرو میشود تهیه میگردد. شیر در زبان آذری و ترکی سوت گفته میشود به همین دلیل نام آذری این غذا سوتی پیلو یا شیر پلو میباشد.

طرز تهیه پیش رو سوتی پلو اردبیلی هست . اردبیل یکی از شهرهای قدیمی و زیبای ایران می باشد که در نزدیکی دریای مازندارن قرار درد. اردبیل برای داشتن عسل سبلان– تجارت فرش و قالی و مناظر زیبای طبیعی معروف میباشد. بیست و چهار محوطه ی باستانی ایران در لیست میراث جهانی یونسکو قرار دارد وبقعه شیخ صفی االدین اردبیلی یکی از این محوطه ها میباشد که به ثبت جهانی رسیده اس

سوتی پلو رو میتوان با ماهی دودی و یا با خرما و کشمش تفت داده در کره سرو نمود. بکاربردن زعفران ایرانی-کره- دارچین در تهیه ی این غذا آن را تبدیل به یک غذای استثنایی و بسیار خوشمزه میکند

مواد لازم

دو پیمانه برنج

دو پیمانه شیر

یک پیمانه و نیم آب

یک پیمانه خرما

یک پیمانه کشمش

سه ق غ کره

دو ق غ روغن مایع

یک ق غ زعفران دم کرده

یک ق چ پودر دارچین

نصف ق چ زردچوبه

طرز تهیه


برنج را شسته و داخل قابلمه همراه با شیر- آب – دو ق غ کره و مقداری روغن مایع روی حرارت قرار میدیم تا بجوش بیاد و بعد حرارت رو کم می‌کنیم. زردچوبه ومقداری زعفران به برنج اضافه می کنیم. میگذاریم شیر و آب بخورد برنج بره و مثل کته دم بکشه.

تا آماده شدن کته- داخل تابه کمی کره ریخته و کشمش هارو با مقداری دارچین و کمی زعفران تفت می دهیم تا نرم شوند. همین کار را با خرما ها هم انجام می دیم.

سوتی پلو را در ظرف مورد نظر سرو کرده و با خرما و کشمش آماده شده تزیین و سرو میکنیم. نوش جان- نوش اولسون
