Dried Fruits Biscuits (Biscotti) بیسکویت ایتالیایی

These scrumptious biscuits are really good. I am sure kids and adults would love it. It is classic Italian biscjuite which is called (Biscotti) in Italian. Recipe is flexible and you can choose your favourite dried fruits and nuts to prepare it. They are just good, simple, healthy, tasty and beautiful.

Ingredients

  • 160g all purpose flour
  • 110g butter, softened
  • 100g sugar
  • 50g nuts:pistachio or walnuts or almonds, chopped
  • 2 eggs
  • 1 ½ tsp baking powder
  • grated zest of 1 lemon
  • grated zest of 1 orange
  • 1 tsp vanilla extract
  • 1 cup dried fruits such as: cherries, raisins, apricots, chopped
  • Handful crystallised ginger

Method

Preheat oven to 180C.

In a bowl, beat the butter with sugar until creamy. Add eggs, lemon, orange zest and vanilla extract. Mix well.

Add baking powder and flour. Combine well. Then add dried fruits, nuts and ginger.

Line baking sheet with parchment paper. Pour the dough into 2 small and long loafs in the baking tray. Sprinkle some flour top of the dough and give the right shape.

Bake it for 25 minutes. Remove from the oven and let cool. Then cut each loaf into small slices. And put it back in the oven and bake for another 15 minutes.

You can store these yummy fruity biscuits in a container for about 10 day. They can be frozen up to 2 months.

بیسکویت ایتالیایی

این بیسکویت های قشنگ یکی از بیسکویت های کلاسیک و سنتی ایتالیایی هست که بیسکوتی نامیده میشه و به معنی بیسکویتی هست که دوبار پخته میشه که در واقع همینطور هم هست. بیسکوتی شیرینی هست که با انواع میوه های خشک و آجیل تهیه میشه.طعم این بیسکویت ها رو نمی تونید درهر قنادی پیدا کنید. مطمئنم بزرگ و کوچک این بیسکویت ها را دوست خواهند داشت. مواد لازم برای تهیه اش انعطاف پذیر هست یعنی می تونید از میوه‌های خشک و آجیل که خودتون دوست دارید استفاده کنید

مواد لازم

صدوشصت گرم آرد همه منظوره

صدوده گرم کره ی نرم

صد گرم کره

پنجاه گرم گردو یا پسته یا بادام خرد شده

دو عدد تخم مرغ

یک و یک دوم بیکینگ پودر

پوست رنده شده ی یک پرتقال

پوست رنده شده ی یک لیمو ترش

یک ق چ عصاره وانیل

به میزان یک مشت دست زنجبیل شکری

یک پیمانه میوه‌های خشک مثل قیسی – آلو بخارا- کشمش- گیلاس

طرز تهیه

فر را با حرارت 180 درجه ی سانتیگراد گرم کنید.

داخل یک‌کاسه کره و شکر را با هم مخلوی کنید تا به صورت کرم مانند در آید. تخم مرغ ها- پوست رنده شده ی پرتقال- لیمو و عصاره ی وانیل را به مواد بالا اضافه کرده و هم بزنید. بیکینگ پودر و آرد را اضافه کرده و باز هم میزنیم. حالا میوه‌های خشک و گردو و زنجبیل را هم اضافه می کنیم.

داخل سینی فر را با کاغذ آشپزی می پوشانیم. مایع آماده شده را به دو قسمت روی کاغذ پخش می کنیم. چون مایع حالت چسبندگی دارد کمی آرد روی خمیر بپاشید و با دست خمیر ها را شکل دهید که به صورت طولی در آید.

خمیر آماده شده را داخل فر گذاشته تا برای 25 دقیقه بپزد. وقتی آماده شده از فر خارج کرده و بگذارید سرد شود و بعد هر تکه را به بخش‌های کوچک برش دهید.

مجددن داخل فر گذاشته تا برای 15 دقیقه ی دیگر بپزند و حالت ترد بگیرد.

این بیسکویت های خوشمزه رو میشه تا ده روز داخل ظرف درپوش دار به صورت تازه نگه داشت و یا برای دو ماه در فریزر نگه داری کرد.
