Persian Zucchini Stew خورش کدو سبز

Green zucchini/courgette stew  is a classic- colourful and flavourful Persian stew ( khoresht). Zucchini is called kadoo کدو in Farsi language. If you think courgette is boring, you have to try this recipe. It’s cooked in a lemony-tomato sauce along with beautiful spices such as Persian saffron, turmeric, ….You might use either beef/lamb or chicken meat.

 Lemon juice or Ghooreh ( unripe grapes) gives unique taste to this recipe. This meal is a lovely, comforting stew that my mother used to cook once a week.

Ingredients

  • 1 large zucchini/courgette, peeled and sliced
  • 200g lamb, diced
  • 2 medium onions, chopped
  • 2 tomatoes
  • 1 lemon juice or handful Ghooredh (unriped grapes)
  • pinch of Persian saffron
  • ½ tsp turmeric
  • 2tbsp tomato paste
  • Sand pepper to taste
  • Vegetable oil

Method

In a pot with diced meat, add one of chopped onions and water. Leave to cook until nice and tender. In a non-stick pan, drizzle with oil and saute other onion until translucent.

Cut zucchini lengthwise. Heat the oil in a non-stick pan and place them in the pan. Lightly fry.

Once meat is ready, add fried onion and sauté for 2-3 minutes.. Mix 1 ½ cups of boiling water with pinch of Persian saffron, turmeric, tomato paste, and lemon juice.

Seasoning with salt and pepper, mix well and pour in the pot with meat and onion. If you do not like lemon juice, simply add unripe grapes to the stew and let to cook with other ingredients.

Add fried zucchini slices and tomatoes halves to other ingredients in the pot. Cover the pot and cook over medium to low heat until juice reduce.

Serve khoresht kadoo warm over polo (pilaft ) or with flat bread and a salad by the side.

خورشت کدو سبز

خورشت کدو سبز یکی از خورشت های سنتی ایرانی هست . کدو سبز در انگلیسی زوککینی یا کوژت گفته میشود. طعم این خورشت با آب لیمو یا غوره – سس گوجه‌فرنگی و ادویه های خوش طعم و رنگی مثل زعفران زیبای ایرانی و زردچوبه بسیار لذید میشود. اگر فکر میکنید کدو سبز خسته‌کننده و یا بیمزه هست این خورش رو حتمن امتحان کنید. برای گوشت خورشت میتوان از مرغ – گوشت گوساله یا گوسفند هم استفاده نمود. وقتی ما بچه بودیم مادرم هفته‌ای یکبار خورش کدو سبز برای ما می پخت.

مواد لازم

یک عدد کدو سبز درشت

دویست گرم گوشت خورشتی گوسفندی

دو عدد پیاز

دو عدد گوجه‌فرنگی

یک ق غ لیمو ترش یا دو ق غ غوره

دو ق غ رب گوجه فر نگی

دو ق غ زعفران دم کرده

نصف ق چ زردچوبه

نمک و فلفل به میزان لازم

روغن زیتون یا هر روغن گیاهی

طرز تهیه

گوشت خرد شده را با مقدار مناسبی آب و یکی از پیازهای خرد شده پخته تا نرم شود. داخل یک تابه مقداری روغن ریخته و پیاز دوم را تفت دهید تا کمی رنگ آن تغییر کند.

کدو را به صورت طولی برش داده و در تابه کمی سرخ کنید. وقتی گوشت پخت – پیاز تفت داده شده رابه گوشت اضافه کنید و دو سه دقیقه با هم سرخ کنید تا رنگ گوشت قهوه ای شود.

داخل یک پیمانه و نیم آب جوش زعفران- زردچوبه- رب گوجه‌فرنگی – آبلیمو – نمک و فلفل زده وهم بزنید. سس آماده شده را به گوشت و پیاز اضافه کنید در صورت عدم استفاده از آبلیمو می‌توانیدغوره را به خورشت اضافه کنید. کدو های سرخ شده و گوجه‌فرنگی های از وسط نصف شده را هم به مواد داخل قابلمه اضافه کرده در قابلمه را گذاشته و بگذارید روی حرارت متوسط پخته و خورشت جا بیفتد.

خورشت کدو را با پلو/کته یا با نان سرو کنید.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
