Potato Rice کته سیب زمینی

This is a simple but fantastic rice dish recipe made with few ingredients rice and potaotes. It might be served as main course or as a side dish. This meal is vegetarian dish but it goes equally well with beef, lamb/ chicken.

For making potato rice , good quality rice is a very important key. I have used Persian smoked rice (berenj-e doodi برنج دودی). This kind of rice, imediately after harvest, go under traditional smoking process and after this process, rice transforms into an amazing taste with smoky flavour. When you cook smoked rice (Berenj-e doodi) , a wonderful aroma develops all over the kitchen and house.So if you are interested you can follow my easy peasy potato rice recipe .

Ingredients

  • 2 cups Persian smoked rice
  • 3 potatoes, peeled and cut into chunks
  • 1 tsp salt
  • 2 tbps butter

Method

Wash the rice two times. Add rice in the rice cooker with enough water to cook, also add salt, potatoes and butter.

Serve the rice warm with yogurt , fresh herbs (sabzi khordan)or salad. You can have plain yogurt or mixture of yogurt with chopped cucumber or mixture of yogurt with beetroot powder.

I share my recipes in Farsi/English along with step by step photos of preparation. I take all my own pictures. I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
