Kookoo loobia sabz کوکوی لوبیا سبز تبریزی

Kookoo lobia sabz کوکو لوبیا سبز  is a traditional classic dish in Tabriz تبریز an ancient city in NW of Iran. This dish is served in especial occasions and for Iftar in month of Ramadan.

Tabrizi green beans frittata is absolutely delicious, full of flavour and colour.

Kookoo ( kuku) in Iranian cuisine, applies to an eggy dish or an egg-based dish. Kookoo or frittata might be meatless that would be a vegetarian dish and sometimes is made with meat.

Kookoo is a mixture of whipped eggs with different ingredients.

Green beans is called loobia sabz in Farsi language. My today recipe is meatless kookoo loobia sabz but you can add 200g minced beef to the ingredients if you wish.

Ingredients

  • 350 g baby green beans, finely diced and boiled
  • 100 g carrots, finely diced and boiled
  • 100 g potatoes, finely diced and fried
  • 1 large onion, finely chopped and fried
  • 5 eggs
  • 2 tbsp chopped walnuts
  • 1 tbsp flour
  • ½ tsp baking powder
  • 1 tbsp saffron water
  • 1 tbsp milk
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Vegetable oil

Instructions

Crack the eggs into a large bowl. Add milk, chopped walnuts, flour, baking powder, saffron water, turmeric and season with salt and pepper. Whisk it well until all ingredients combine together. Saffron smell spread all over the kitchen and it’s lovely.

Next, add fried and boiled vegetables to the egg mixture. Mix all together.

Heat the oil in a deep pan, pour the mixture in the pan. Firmly press the ingredients with the back of the spoon to the down. Cover the pan with a lid and allow to cook on side ( about 10-15 minutes), then flip over to cook other side.

Serve it in a platter garnish with Zereshk (Barberries) and cut it into pieces.

کوکوی لوبیا سبز تبریزی

یکی از غذاهای سنتی شهر زیبا و باستانی تبریز کوکوی لوبیا سبز است. کوکوی لوبیا سبز تبریزی یک غذای فوق‌العاده خوش مزه و پر از رنگ و طعم هست که در مهمانی‌ها و نیز برای افطار در ماه مبارک رمضان تهیه میشود. اگر تا بحال این کوکوی متفاوت رو نخوردید و فقط تعریفش رو شنیدید باید حتمن امتحان کنید.

کوکو در آشپزی ایرانی به نوعی غذا گفته میشه که پایه ی اصلی اون تخم مرغ است. کوکو که به انگلیسی « فریتاتا» گفته میشه میتونه یک غذای گیاهی باشه وگاهی هم با گوشت پخته بشه..

مواد لازم

سیصدوپنجاه گرم لوبیا سبز جوان و تازه – ریز حلقه شده و آبپز شده

صد گرم هویج نگینی خرد شده و آبپز شده

صد گرم سیب زمینی نگینی خرد شده و سرخ شده

یک عدد پیاز نگینی خرد شده و سرخ شده

پنج عدد تخم مرغ

دو ق غ گردوی خرد شده

یک ق غ آرد

نصف ق چ بیکینگ پودر

یک ق غ آب زعفران

یک ق غ شیر

یک ق چ زردچوبه

نمک و فلفل به میزان نیاز

روغن مایع

طرز تهیه

تخم مرغ ها را داخل یک‌کاسه بشکنید. شیرگردوآردبیکینگ پودرآب زعفرانزردچوبه و نمک و فلفل را به تخم مرغ ها اضافه کرده و همه موادرا با هم خوب هم می‌زنیم.

در این مرحله – سبزیجات آبپز و سرخ شده را با مایع تخم مرغی مخلوط کرده و مواد را هم می زنیم..

مقداری روغن را در یک تابه ی نچسب و گود ریخته و داغ می کنیم. مایع کوکو را داخل تابه ریخته ودر سطح تابه پخش می کنیم و با پشت قاشق مواد را فشار می‌دهیم تا در تابه به صورت یکسان و منسجم پخش شوند.

در تابه را می‌گذاریم تا یک طرف کوکو پخته شود( که حدود 15-10 دقیقه) و بعد کوکو را پشت و رو می‌کنیم تا روی دیگرش هم بپزد.

کوکو را داخل یک ظرف سرو می‌کنیم و رویش کمی زرشک می‌ریزیم و به قطعه‌های کوچک برش می دهیم.
