Shirazi Rice Pilaf

Shiraz شیراز is an ancient city in SW of Iran. Shiraz is known as the city of literature, flowers, gardens, nightingales and poets.

This beautiful city is a one of the important tourism centres in Iran. With a short driving distance from Shiraz there are ruins of some of most spectacular ancient sites such as: ancient city of Persepolis, Tomb of Cyrus the Great in Pasargadae پاسارگاد, ancient necropolis of Naqsh-e Rustam نقش رستم with rock cut tombs of Persian kings, Naghsh-e Rajab نقش رجب with rock cut reliefs,….

My recipe is called Qanbara polow قنبر پلو or Qambar polow غم بر پلو =literally it means lose your sadness😃,it is one of the traditional classic rice dishes from Shiraz that is served in especial occasions, parties and as Iftar in month of Ramadan.

Ingredients

  • 3 cups rice
  • 350 g minced meat
  • 1 large onion, finely chopped
  • 100 g chopped walnuts
  • 2 tbsp gram flour
  • 50 g raisins
  • 3 tbsp pomegranate molasses Click here to find on Amazon
  • 1 ½ tsp grape molasses
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Vegetable oil

Instructions

In a bowl with minced meat, add gram flour, turmeric and season with salt and pepper. Mix all together well. Then, give small ball shape to the meat. Heat the oil in a pan and fry them.

Heat the oil in another pan and sauté chopped onion until soft, then add raisins and chopped walnuts. Fry for 2 minutes and set aside.

In a bowl with pomegranates molasses, add grape molasses and 2 tbsp of olive oil. Mix together.

Semi cook the rice. Add meat balls and fried onion mixture with walnuts and raisins. Pour molasses mixture top of rice and allow to cook perfectly.

Once rice is done, gently stir the rice and serve it.

قنبر پلو / غم بر شیرازی

شهر زیبای شیراز در جنوب غرب ایران قرار دارد. شیراز شهر شعر و شاعری – ادبیات- و گل وبلبل و باغ می باشد. این شهر باستانی که یکی از شهرهای توریستی مهم و کلیدی ایران است که دارای ارزش فرهنگی بیشماری می باشد.

در فاصله ی کمی از شیراز محوطه های باستانی تخت جمشید( پرسپولیس) – پاسارگاد ( آرامگاه کوروش کبیر)- نقش رجب – نقش رستمکعبه ی زرتشت و….. قرار دارند.

یکی از غذاهای محلی و سنتی شیراز قنبر پلو یا غم بر شیرای می باشد. این غذای برنجی با مزه ی ملس و کوفته ریزه محبوبیت زیادی در شیراز داشته و در مناسبتها و مهمانی‌ها و در ماه مبارک رمضان برای افطار یا سحری پخت میشود.

مواد لازم

سه پیمانه برنج

سیصدو پنجاه گرم گوشت چرخ کرده

یک عدد پیاز درشت – نگینی خرد شده

صد گرم مغز گردو

دو ق غ آرد نخود چی

پنجاه گرم کشمش

سه ق غ رب انار

یک و نیم ق غ شیره ی انگور

یک ق چ زردچوبه

نمک و فلفل به میزان لازم

روغن به میزان لازم

طرز تهیه

گوشت چرخ کرده را با نمک – فلفل- زردچوبه و آرد نخوچی مخلوط کرده و برای یکی دو دقیقه ورز بدهید . سپس به صورت کوفته های متوسط درآورده و در روغن سرخ کنید.

در یک تابه ی دیگر پیاز های نگینی تفت داده ووقتی نرم شدند گردوی خرد شده و کشمش ها را هم اضافه کرده و یکی دودقیقه با هم تفت می دهیم.

داخل یک پیاله رب انار را با روغن زیتون و شیره ی انگور مخلوط کنید.

برنج را به مرحله ی آبکشی رسانده و در قابلمه ریخته و کوفته ها و مخلوط پیاز – کشمش و گردو را لابلای برنج ریخته و در انتها شیره ی رب انار-انگور را روی برنج بریزید و بگذارید برنج دم بکشد.

I have learned my traditional Persian and Azerbaijani recipes from my lovely mother, and she has learned from her mother. Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
