Summer Pudding

I love Summer pudding with lots of berries and cream. Very refreshing and tasty dessert.

Ingredients

  • 150 g white sugar
  • 300 g strawberries, sliced
  • 150 g blueberries
  • 150 g red berries
  • 200 ml water
  • 7 slices bread
  • cream for garnishing

Instructions

Wash the fruits and drain them in a sieve. Put the sugar in a pan with splash of water and heat to simmer. Add all the berries and let simmer for about 2-3 minutes. Then turn off the heat.

Now, using a strainer and drain the juice into a bowl.Line the pudding bowl with cling film, leaving hanging outside of the bowl.

Cut the bread into thin slices and remove the crusts. Cut one slice of bread into a circle shape to fit the bottom of the bowl.

Dip one side of the circle bread into the juices and place juice side down in the bottom of bowl. Repeat the same with thin slices of bread: dipping one side of the bread into the juices and placing them around the edge of the bowl, with dipped side facing outwards. Overlapping each slice slightly.

Spoon all of the cooked berries into the bowl and top with another slice of bread , again soaked in the juices. Pour more juices top of the pudding and push down to compress the pudding. Fold the cling film over the top. Put a heavy weight on top and store in the fridge for 7-8 hours.

Turn the pudding out into a plate and garnish with berries and cream.

پودینگ تابستانی

یکی از دسرهای معروف انگلیسی سامر پودینگ یا پودینگ تابستانی هست که از قرن ۱۹ میلادی رایج است. این دسر بسیار خوشمزه و مناسب فصل گرما هست و ازترکیب میوه‌های تابستونی مثل توت فرنگی – شاتوت- تمشک – گیلاس و نان تهیه میشه و با خامه سرو میکنن. خیلی خوشمزه میشه.

مواد لازم

سیصد گرم توت فرنگی از وسط خرد شده

صدوپنجاه گرم تمشک

صدوپنجاه گرم شاتوت

صدو پنجاه گرم شکر

دویست میلی لیتر آب

هفت تکه نان سفید

خامه برای سرو کردن

طرز تهیه

میوه‌ها را شسته و داخل آبکش بگذارید تا آب اضافی آن‌ها خارج شود. شکر را داخل قابلمه ریخته وآب را اضافه کنید. وقتی شکر آب شد میوه‌ها را داخل شربت بریزید و دوسه دقیقه میوه‌ها راحرارت دهید تا فقط نرم شوند. قابلمه را از روی حرارت برداشته و میوه‌ها را داخل توری یا آبکش ریخته تا شربت از میوه جدا شود.

داخل یک پیاله را با ورقه ی نایلونی بپوشانید بطوریکه گوشه‌های نایلون بیرون پیاله قرار بگیرد. چهار گوشه ی نان را جدا کنید . یکی از نان‌های تست را به صورت گرد برش داده و ته پیاله بگذارید.

باقی نان‌ها را از وسط نصف کنید. هر تکه از نان را داخل شربت کنید و دور دیواره ی پیاله بچینید. دقت کنید همان روی شربتی نان باید به سمت بیرون پیاله باشد ( مطابق تصاویر).نان ها را باید طوری بچینید که هر نان کمی روی نان دیگر قرار گرفته باشد و فاصله‌ای بین نان‌ها نباشد.

وقتی نان‌ها چیده شدند – میوه‌های پخته را داخل پیاله ریخته و یکی از نانها را روی میوه گذاشته واز شربت روی نان بریزید و نان را با دست کمی به سمت پایین فشار دهید. روی پودینگ را با نایلون پوشانده ویک وزنه ی سنگین روی آن بگذارید. پیاله را داخل یخچال گذاشته و بگذارید برای 7-6 ساعت یا از شب تا صبح در یخچال بماند .

. زمان سرو نایلون را باز کرده و پودینگ رااز پیاله خارج کنید و با خامه و میوه سرو کنید.

اگر از شربت باقی‌مانده بود روی پودینگ بریزید.

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
