How to make stuffed Rose Shaped Bread

Rose shaped bread نان با طرح گل سرخ is very delicious. However preparing of bread, needs spending longer time but result is so good and you will be happy with your baking.
This bread not only has a beautiful shape but also has a very tasty filling. If you do not like this filling you can simply add your favourite vegetables, different cheese or even meat (fish, beef, chicken,..).

Ingredients for dough

  • 500 g plain flour
  • 1 cup warm water (not boiled)
  • 1 egg 
  • 1 tbsp. dried yeast
  • 1 tsp. sugar
  • 1 tsp salt
  • ¼ cup oil
  • 2 tbsp. milk

Ingredients for filling

  • 1 large onion, finely chopped
  • 200 g grated cheddar cheese
  • 4-5 medium tomatoes, finely chopped
  • 1 egg yolk
  • 1 tbsp. garlic powder
  • 1 tbsp onion powder
  • ½ tsp salt
  • 3 tbsp. oil
  • ¼ tsp white pepper powder
  • 1 tbsp. sweet paprika
  • 3 tbsp. water

Preparation
In a large bowl with flour, add sugr, salt and milk. Mix together. Add dried yeast , 4 tbsp. warm water, oil and egg. Mix all together. Then, slowly add and stir in remains of warm water to the flour. Transfer mixture into the food processor and knead the dough for 15 minutes until dough is elastic. 


Oil lightly a bowl and place the dough into the bowl, cover it and allow rising for 2 hours.
Until dough gets ready, we prepare filling. In a saucepan, heat the oil, add chopped onion and sauté until soft, then add in chopped tomatoes, onion, garlic powder, salt, sweet paprika and 3 tbsp. water, mix well. Then, add grated cheese and cook for 10 minutes. Set aside to cool.

Once dough is ready, slightly press it with your hand to release the air inside the dough.
Spread some flour on the working table. Spread dough with a rolling pin into about ½ cm. Now cut 1 medium size circle and also cut smaller circles from the remaining dough.


Roll each one of small circle dough thinner. Add 1 tsp of the filling. Fold and seal with a fork ( see photos). Roll out the big circle. Cut like you see in the photo. Add ½ tbsp. of the filling to the middle. Fold to make a rose bud. Place the rose bud in the centre of an oiled baking pan, then place smaller filled doughs around the bud ( see photos). At the end, brush your filled dough with beaten egg yolk. Bake in 190C for 35 minutes ( or until golden).

نان شکل گل رز

این نان شکل گل رز را دارد و نه تنها ظاهرزیبا بلکه داخل نان هم با مواد لذیدی پر شده که مزه ی بسیار مطبوعی دارد. با اینکه تهیه ی این نان نیاز به صرف وقت طولانی تر از معمول دارد ولی وقتی نان آماده شد از نتیجه ی زحمت خود بسیار راضی خواهید بود.
اگر با موادی که داخل نان قرار می گیرد راضی نیستید می توانید از سبزیجات و پنیرمورد علاقه ی خود استفاده کنید حتی می توانید از گوشت ماهی – مرغ و گوساله نیز استفاده کنید.

مواد لازم برای خمیر
پانصد گرم آرد معمولی
یک پیمانه آب ولرم
یک عدد تخم مرغ
یک ق غ پودر یست
یک ق چ شکر
یک ق چ نمک
یک چهارم پیمانه روغن
دو ق غ شیر

مواد لازم برای داخل نان
یک عدد پیاز درشت- خرد شده
دویست گرم پنیر چدار رنده شده
چهار-پنج عدد گوجه فرنگی خرد شده
یک عدد زرده ی تخم مرغ
نصف ق چ نمک
سه ق چ روغن مایع
یک چهارم ق چ پودر فلفل سفید
یک ق غ پودر پاپرکا
سه ق غ آب

طرز تهیه
در یک کاسه ی بزرگ – آرد- شکر- نمک و شیر را با هم مخلوط کنید. سپس پودر یست – 4 ق غ آب گرم- روغن و تخم مرغ را به آرد اضافه کنید و همه ی مواد را با هم مخلوط کنید.سپس به آرامی بقیه ی آب گرم را به آرد افزوده و مخلوط را داخل غذا ساز ریخته و بگذارید برای 15 دقیقه خمیر ورز داده شود تا به صورت نرم در آید.
داخل کاسه را کمی روغن زده و خمیر را داخل آن بگذارید روی آن را بپوشانید و بگذارید تا 2 ساعت بماند و پف کند. تا آماده شدن خمیر- مواد داخل خمیر را آماده می کنیم. در یک تابه مقداری روغن را گرم کنید و پیاز خرد شده را کمی تفت دهید تا نرم شود سپس گوجه های خرد شده – پودر پیاز و سیر – نمک – پودر پاپریکا و 3 ق غ آب را اضافه کنید و پس از مخلوط کردن پنیر رنده شده را نیز بیفزایید و بگذارید تا 10 دقیقه بپزد. سپس مخلوط آماده شده را کنار بگذارید تا خنک شود
زمانیکه خمیر آماده شد روی سطح کار کمی آرد پخش کنید و خمیر را با وردنه به ضخامت ½ سانتی متر پهن نمایید. حالا یک دایره ی متوسط را از خمیر در بیاورید و بعد دایره های کوچکتری با مابقی خمیر برش دهید. هر یک از خمیر های کوچک را با وردنه بازکرده و وسط خمیر 1 ق چ از مخلوط آماده شده را قرار دهید و مطابق تصاویر موجود خمیر را با چنکال ببندید. حالا خمیر دایره شکل بزرگ را طبق تصاویر برش دهید . ½ ق غ از مخلوط را وسط خمیر گذاشته وخمیر را مطابق تصاویر به شکل گل جمع کنید. سپس ظرف پخت را کمی روغنی کنید. گل خمیری حاضر شده را وسط سینی قرار دهید (مطابق تصویر) و دایره های کوجک تر را دور گل قرار دهید ( مطابق تصاویر). در پایان یک زرده ی تخم مرغ را روی نان بزنید . سینی نان را داخل فر گذاشته وبگذارید با حرارت 190 درجه ی سانتیگراد برای 35 دقیقه و زمانی که طلایی شودبپزد

Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
