Healthiest Bulgur Kofte

Bulgur kofte کوفته بلغور or bulgur  balls are suitable dish for vegetarians. These lovely bulgur balls or kofte are gorgeous and yummy. It is a quick and hearty dish you can try.

Ingredients

  • 2 cups bulgur
  • 2 cups boiled water
  • 1 cup all purpose flour
  • 1 egg
  • 1 tbps tomato paste
  • 1 tsp cumin powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Ingredients for sauce

  • 2 clove garlic, grated
  • 1 ½ tsp cumin powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 tbsp pomegranate molasses
  • Handful fresh or dried parsley
  • Salt and pepper to taste

How to make it??

In a bowl with bulgur, add 2 cups of boiled water, mix together and cover the bowl with a lid and set aside for 15 minutes.

After 15 minutes, add egg, flour, tomato paste, cumin powder, paprika, and season with salt and pepper.

Mix together and then add 1/3 cup water to the bulgur mixture and combine all ingredients together very well. As you squeeze more, the texture of kofte would be better.

Grease your hands with oil and start to make small balls or kofte.

Now, we prepare the sauce. Heat the oil in a saucepan and add grated garlic, fry couple of minutes. Then add cumin, paprika, salt, pepper, tomato paste, pomegranate molasses to the garlic, sauté for a minute. Sauce is ready.

At this point, add some water and 1tsp salt to a pot and bring it to a boil, then add all kofte into the boiled water.You would see all kofte will sit at the bottom of the pot and once they are cooked and ready, will come to the surface of the boiled water.

At this point collect all of cooked kofte and add them into the sauce pan. Gently mix all together . Serve it in a plate topped with chopped parsley.

کوفته بلغور گیاهی

با بلغور نه تنها میشه سوپ – آش – سالاد و کته درست کرد بلکه میشه کوفته ریزه های خیلی خوشمزه و اشتهابرانگیری هم تهیه کرد که خیلی آسان و سریع درست میشه و گزینه ی مناسبی برای افراد گیاهخوار خواهدبود.

مواد لازم

دو پیمانه بلغور

دو پیمانه آبجوش

یک پیمانه آرد

یک عدد تخم مرغ

یک ق غ رب گوجه‌فرنگی

یک ق چ پودر زیره

یک ق چ پاپریکا

نمک و فلفل به میزان لازم

روغن زیتون

مواد لازم برای سس

دوحبه سیر رنده شده

یک و یک دوم ق چ پودر زیره

یک ق چ پاپریکا

یک ق غ روغن زیتون

دو ق ع رب گوجه‌فرنگی

دو ق غ رب انار

مقداری جعفری تازه و یا خشک خرد شده

نمک و فلفل به میزان لازم

طرز تهیه

داخل یک‌کاسه بلغور را با دو پیمانه آبجوش هم بزنید. روی ظرف را برای یکربع بپوشانید. بعد از ۱۵ دقیقه تخم مرغ – آرد – رب گوجه‌فرنگی – زیره – پاپریکا و نمک و فلفل را به بلغور اضافه کرده و همه ی مواد را هم بزنید و بعد یک سوم پیمانه آب روی بلغور ریخته و همه ی مواد را دو سه دقیه ورز دهید تا خوب با هم مخلوط شوند.

دست خود را کمی روغنی کنید و از مخلوط آماده شده به اندازه گردو برداشته و به شکل گرد و کوفته ریزه در آورید. وقتی تمام کوفته ها حاضر شندند کنار بگذارید. در این مرحله سس را حاضر می کنیم. برای تهیه ی سس داخل تابه کمی روغن زیتون ریخته و سیر رنده شده را دو دقیقه تفت دهید و بعد زیره – پاپریکا – نمک و فلفل – رب گوجه‌فرنگی و رب انار را روی سیر ریخته و مواد را هم زده و برای یک دقیقه تفت دهید. سس آماده هست.

حالا مقداری آب را با یک ق چ نمک داخل قابلمه ریخته و بجوش آورید و کوفته ها را داخل آبجوش بریزید. کوفته ها در این مرحله به ته قابلمه می‌روند ولی وقتی پخته شدند روی آب می‌آیند که در این زمان می‌توانید کوفته ها را با کفگیر از آب در آورده و داخل سس آماده شده بریزید. کوفته ها را با سس خوب مخلوط کنید و زمان سرو روی آن مقداری جعفری تازه یا خشک خرد شده بریزید.
