Vegetarian kebab کباب گیاهی

This is one of the  tastiest vegetarian kebabs which is made with bread and vegetabls. It is simple but super tasty and easy to make it, with crispy texture, golden outside and fulllllllllllll of flavour. You may serve it with yogurt, sweet chilli sauce, any kind of chutney or ketchup.

Ingredients

  • 5 slices of fresh white or brown bread
  • 1 cup chickpeas, cooked
  • 1 onion
  • 1 lemon juice
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 1-2 cloves of garlic
  • Small piece of fresh ginger
  • 3 tbsp yogurt
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp coriander powder
  • ½ tsp curry powder
  • 1 tsp Olive oil
  • salt and pepper to taste

How to make it???

Put slices of bread into a food processor or blender and blend it until crush and look like soft bread crumbs and set aside.

Put cooked chickpeas into a mixing bowl. Add onion, garlic, ginger, mint and coriander leaves, lemon juice, yogurt and oil to the chickpeas. Blend until become purée. Add puree mixture and all spices to the bread crumbs, mix until combine well.

Grease your hand, take a small portion of mixture and roll it like a hot dog, however you can give ball shape or cutlet/ round burger shape too. Once all kebabs are done, you may push the wooden sticks into the kebab . it ‘s just optional.

Now heat the oil or butter in a saucepan. Place kebabs into the pan and fry for 3-4 minutes, until golden crispy.

Serve it with your favourite sauce.

کباب گیاهی

یکی از خوشمزه ترین کباب های گیاهی که میشه با نان تست درست کرد همین کبابه. یک کباب خیلی خیلی خوشمزه ی گیاهی با سبزیجات و ادویه های معطر. طرز تهیه ی این کباب گیاهی فوق‌العاده ساده وفوق العاده لذیذ هست .این کباب دارای بافت ترد و روی کباب سرخ شده و قهوه ای رنگ هست. این کباب گیاهی رو می تونید با ماست – کچاپ – انواع ترشی و سس چیلی شیرین می تونید سرو کنید.

مواد لازم

پنج نان تست قهوه ای یا سفید رنگ

یک پیمانه نخود آبگوشتی آبپز

یک عدد پیاز درشت

یک عدد لیمو ترش

به میزان کف دست برگ نعنای تازه

به میزان کف دست برگ گشنیز تازه

دو حبه سیر

یک تکه کوچک زنجبیل تازه

سه ق غ ماست

یک ق چ زیره

یک ق چ پاپریکا

نصف ق چ پودر تخم گشنیز

نصف ق چ ادویه کاری

یک ق چ روغن زیتون

نمک و فلفل به میزان لازم

طرز تهیه

تکه‌های نان را داخل غذا ساز ریخته وپودر کنی د همانطور که در تصاویر ملاحظه می‌کنید نان به صورت ماسه ای خرد شده است.نان خرد شده را کنار بگذارید. نخود پخته شده را همراه با پیاز – سیر- زنجبیل- برگ نعنا و گشنیز – آبلیمو ترش – ماست و روغن داخل غذاسازریخته و به صورت پوره و له شده در آورید.

مایه آماده شده را با ادویه های ذکر شده مخلوط کنید و روی نان پودر شده بریزید و همه ی مواد را با هم خوب مخلوط کنید . هر چه بیشتر ورز دهید خمیر مناسبتر خواهید داشت.

در این مرحله مقداری از خمیر را به اندازه یک پرتقال برداشته و به شکل سوسیس یا کتلت یا به شکل برگرگرد در آورید. وقتی کباب ها را شکل دادید. می‌توانید از سیخ‌های چوبی استفاده کرده و داخل هر کباب فرو کنید ( استفاده از سیخ چوبی ضروری نیست).

مقداری روغن زیتون را داخل تابه گرم کرده و کباب ها را برای سه چهار دقیقه سرخ کنید تا طلایی شوند. این کباب خیلی خیلی خوشمزه را می‌توانید با کته / پلو یا نان سرو کنید.
