My Homemade Chicken Sausages تهیه سوسیس مرغ

This is how I make my own homemade chicken sausage or what we say in Farsi : Sosis-e Morgh سوسیس مرغ.  Chicken is called ‘ Morgh‘ and sausage is ‘ Sosis‘  in Farsi language.  It has fantastic flavour  and  made of minced chicken with aromatic spices and some vegetables and nut.

Once these sausages are done, let to chill in the fridge for 24 hours, then it is ready to be served as boiled sausage or cut them into pieces and fry in oil, both are yummy.

ّingredients

  • 500g chicken breast, skinless and boneless
  • 1 tbsp plain flour
  • 1 egg yolk
  • 2tbsp oil
  • 1 clove of garlic
  • 1 large carrot, peeled, cooked and chopped
  • 2tbsp pistachio, deshell and roughly chopped
  • 4 mushrooms, finely chopped
  • 1tsp curry powder
  • 1tsp paprika powder
  • 1tsp mustard powder
  • 1tbs salt
  • ½ tsp black pepper
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1tsp ginger powder
  • 1tsp nutmeg powder
  • 1tsp oregano powder

How to make it?????

cook carrot. Chop it and set aside. Roughly chop mushroom and pistachio too.

Now, mince the chicken meat. Add spices, grated garlic, egg, oil and flour, mix it with hand until all ingredients are mixed well.

Next, add chopped carrot, mushroom and pistachio. Mix and knead the meat mixture well.

Place some of the meat mixture on the plastic bag. Roll it into the sausage shape. Tied the ends with string. Put it into the another plastic bag and and tied it. Wrap it into aluminium foil and twist the ends to seal it off.

Add water to a pot. Bring it to a boil. Place wrapped meat in the pot. Put a bowl top of the sausages to stop them from moving during the cooking. Allow to cook for an hour.

Once they are cooked, take them out of the pot and let them cool down and then place them in the fridge for 24 hours to set. Next day, unwrap and cut it into slices and and serve it.

طرز تهیه سوسیس مرغ

با این روش من سوسیس های خانگی خودم رو درست میکنم که هم طعم محشری داره . این سوسیس ها از ترکیب گوشت چرخ کرده مرغ با ادویه های معطر و سبزیجات و مغز پسته درست شده اند.

این سوسیس های خوشمزه را میتوان به همین ترتیب که آماده شده سرونمود و یا در کره یا روغن سرخ کرده و استفاده کرد.

مواد لازم

پانصدر گرم گوشت سینه و ران مرغ بدون پوست و استخوان

یک ق غ آرد

یک عدد زرده تخم مرغ

دو ق غ روغن

یک حبه سیر خام رنده شده

یک عدد هویج برزگ پوست گرفته و آبپز شده و خرد شده

دو ق غ پسته خرد شده

چهار عدد قارچ درشت خرد شده

یک ق چ ادویه کاری

یک ق چ پودر پاپریکا

یک ق چ پودر خردل

یک ق غ نمک

نصف ق چ فلفل سیاه

یک ق چ پودر سیر

یک ق چ پودر پیاز

یک ق چ پودر زنجبیل

یک ق چ جوز هندی

یک ق چ پودر آویشن

طرز تهیه

هویج را پخته و ریز خرد کنید. قارچ‌ها و پسته را هم خرد کرده و کناز بگذارید.

حالا باید گوشت مرغ را داخل چرخ گوشت ریخته و چرخ کنیدو بعد ادویه ها – سیر رنده شده- زرده تخم مرغ- روغن و ارد را به گوشت مرغ اضافه کرده و با دست مواد را با هم مخلوط می کنیم. در مرحله بعدی هویج – قارچ و پسته را به مخلوط گوشتی اضافه کرده و همه ی مواد را با هم ورز می‌دهیم تا یکسدت شود.

مقداری از خمیر سوسیس را روی کیسه فریزر می‌ریزیم : مطابق تصاویر و پلاستیک را مانند سوسیس رول می‌کنیم و دو سر پلاستیک را با نخ محکم می بندیم. سپس آن را داخل کیسه فریزر دوم کرده و سر کیسه را هم با نخ می‌بندیم تا زمان پخت آب وارد کیسه مرغ نشود. حالا کیسه حاوی مرغ را با ورق آلومینیوم می پپیچیم تا شکل شکلاتی پیدا کنید و دو سر آن را هم می پیچیم.

داخل قابلمه مقداری آب را بجوش آورده و بسسته سوسیس ها را داخل آبچوش قرار داده وروی آن‌ها یک‌کاسه میگذاریم تا مانع از تکان خوردن آن‌ها شود.

سوسیس باید برای یکساعت در آب پخته شوند. بعد از یکساعت سوسیس ها را از آب خارج کرده و بگذارید سرد شوند و سپس آن‌ها را برای 24 ساعت داخل یخچال گذاشته تا برای 24 ساعت در آنجا

روز بعد سوسیس ها را از داخل فویل و پلاستیک در آورده و سرو کنید.
