Date and Walnut Cake ( کیک خرما و گردو)

ُُThis is my first post in 2019😊✨ , so I would start with something sweet. Date and walnut cake or loaf is tasty and enjoyed in parties or tea rooms. Anytime, if I have Dates at home, I would love to bake date cake, with banana, sometimes with prunes, and sometimes like today with walnuts. It is a delicious recipe full of flavour and IT IS A family cake.

Persian dates are called ‘ Khorma  in Farsi, however other words such as Nakhl نخل and Rotab رطب  are used too. Dates are grown and cultivated in South and East of Iran.

From a historical point of view, it is estimated that the date palm was cultivated in Iran about the 3rd millennium BC . Archaeological evidence shows that there were signs of date trees in stamps from the Elamites period.

Iran is one of the most important producers of dates in the world and more than 400 types of dates are known in Iran.

Ingredients

  • 1 cup dates, chopped
  • ½ cup unsalted butter
  • 1 ¼ cup boiling water
  • 1 tsp baking soda
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 ½ cup plain flour
  • 1 tsp baking powder
  • ½ tbsp cinnamon
  • ½ tsp salt
  • ½ cup walnuts, chopped

ّFor syrup (Optional)

  • 2 tbsp unsalted butter
  • 5 tbsp cream
  • 5 tbsp brown sugar

How to make it?????

Preheat the oven at 176C degree. Buttering the base and sides of a baking pan. Line the base of pan with parchment paper.

Put chopped dates in a bowl. Add baking soda and boiling water. Mix together. Cover the bowl with a lid and set aside to 30 minutes.

Cream the butter and white sugar. Then add vanilla extract and egg to the butter mixture. Beat well.

To a separate bowl, add flour, cinnamon, slat and baking powder and sift the flour. Add the egg-butter mixture and some of chopped walnuts to the flour. Stir and combine well. At the end pour in softened date mixture and mix thoroughly.

Pour the batter into the baking pan. Sprinkle remains of chopped walnuts over the batter. Bake for 25-30 minutes until golden brown.

Using syrup is optional. So you can have the cake with original taste or add some syrup to the cake as well.

Therefore, While cake is baking, we can prepare the syrup for cake:

in a pot, add butter, cream and brown sugar. Boil it for 2-3 minutes until butter melted and syrup thickened.

Once cake is done, remove from the oven and let to cool. Pour the syrup over the cake and serve it with cuppa tea or coffee. So delicious.

 

کیک خرما و گردو

کشور زیبای یران یکی از مهم‌ترین تولید کننده های خرما در جهان هست و بیشتر از 400 نوع خرما در ایر شناسایی شده است کشت خرما در جنوب و شرق ایران رایج است و.برطبق منابع تاریخی سابقه کشت خرما در ایران به هزاره سوم ق. م یعنی حدود پنج هزار سال پیش بر میگردد.

نان یا کیک درست شده با خرما همیشه یکی از شیرینی‌های پرطرفدار هست و در اسکاتلند کیک خرمایکی از کیک های سنتی این کشور بحساب میاد که در بیشتر کافه ها سرو میشه. من خودم هر وقت خرما در منزل داشته باشم غیر ممکنه که یک کیک درست نکنم. گاهی اوقات کیک خرما با موز – گاهی اوقات با آلو و یا مثل امروز کیک خرما و گردو.

یک کیک مخصوص خانواده که خیلییییی خوشمزه و نرم و خوش عطره و در هوای سرد یا خنک تا یک هفته هم بیرون یخچال می تونید نگه دارید.

مواد لازم

یک پیمانه خرمای هسته گرفته و خرد شده

یک پیمانه شکر سفید

نصف پیمانه کره

نصف پیمانه گردوی خرد شده

یک و یک چهارم پیمانه آبجوش

یک ق چ بیکینگ سودا

یک ق چ عصاره وانیل

یک عدد تخم مرغ

یک و یک دوم پ آرد

یک ق چ بیکینگ پودر

نصف ق غ دارچین

نصف ق چ نمک

مواد لازم برای شیره

دو ق غ کره

پنج ق غ شکر قهوه ای

پنج ق غ خامه

طرز تهیه

فر را روی 176 درجه سانتیگراد گرم کنید. کف و دیواره های قالب کیک را چرب کرده و روی کف قالب را با کاغذ روغنی بپوشانید.

خرماهای خرد شده را داخل کاسه ریخته و همراه با بیکینگ سودا و آبجوش هم بزنید. روی کاسه را پوشانده و بگذارید برای نیم ساعت بماند.

کره را با شکر سفید مخلوط کنید و سپس وانیل و تخم مرغ را افزوده و با همزن برقی مواد را مخلوط کنید.

داخل یک‌کاسه دیگر ارد را با نمک – دارچین و بیکینگ پودرمخلوط کنید و سپس مایه کره و تخم مرغ تهیه شده در بالا را همراه با مقداری از گردوهای خرد شده روی آرد ریخته وهمه مواد را خوب با هم ترکیب کنید.. در این مرحله خرمای خیسانده شده در آبجوش را روی خمیر کیک ریخته و همه ی مواد را با هم همزده و مایه کیک را داخل قالب از قبل آماده شده بریزید و باقیمانده گردو را روی کیک پخش کنید.

قالب را داخل فر گداشته تا به مدت 30-25 دقیقه و زمانی که روی کیک طلایی شود خوب بپزد.

تا آماده شدن کیک می‌توانید شیره کیک را آماده کنید . تهیه کردن این شیره یا شربت اختیاری است و اگر دوست ندارید نیازی نیست

خوب برای درست کردن این شربت یا شیره فقط همه مواد لازم شربت را داخل قابلمه ریخته و برای دو سه دقیقه بجوشانید تا هم کره و شکر آبشده و هم به غلظت کافی برسد.

وقتی کیک پخت از فر خارج کرده و بگذارید سرد شود. سپس شربت را روی کیک ریخته و با یک فنجان چای یا قهوه نوش جان کنید چون خیلی خوشمزه و خوش طعم هست.
