Quinoa Flatbread نان کینوا

Some people for different reasons such as allergy or diet, are not able to use flour or egg in loaf bread or flat naan bread. Therefore, using this kind of seeds are good choice, for making glueten free bread for vegetarians/ vegan and non-vegetarian people.

I enjoy to bake and try breads with seeds such as quinoaو flax seed, lentils or chickpeas flour. All are amazingly tasty and healthy.

It is gluten free and  I have made this bread several times and we do enjoy this bread for following reasons:

  • Iit is easily digested
  • It is healthy
  • Will be your new favourite breed
  • It is really delicious and yummy as you can boost the flavour by adding  spices, dried or fresh herbs, garlic powder, Italian herbs, Zatar, sesame seeds, ……….. and make quinoa bread with different flavours,
  • This bread has a soft and tender texture, therefore you can have it with soup, with jam or butter and dip in chutney or use as pizza base

So as you see it is really fabulous bread for vegan and non-vegan. If you give it a go, would know how good it is.

Ingredients

  • 1 cup quinoa
  • 1 1/4 cups water
  • Ingredients for flavour
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp chilli powder
  • ½ dried basil
  • Few fresh leaves of rosemary, chopped
  • few spring onions, chopped

How to make it?????

Preheat oven to 218C degree.

Mix quinoa, water, salt, garlic powder, chilli powder and dried basil together. Then blend the mixture with a food processor or blender until you make a battery mixture.

Now add chopped herbs and mix together. Grease the baking pan with some vegetable oil, or line the baking tray with parchment paper and pour the batter onto the pan. Use a spatula and spread the mixture.

Place it into the oven and bake it for 15-20 minutes until golden brown. Let it cool and then cut it into slices.

 نان کینوا 

من شخصن وگان یا گیاهخوار نیستم اما هر زمان این نان رو پخت کردم واقعن ازش لذت بردم. کینوا گیاهی هست که از برگهاش برای تهیه سوپ و خوراک و از دانه کینوا برای تهیه سالاد یا نان میشه استفاده کرد. طبق نوشته ویکیپدیا از1387 بذر این گیاه وارد ایران شده ولی زیاید شناخته شده نیست. اما فکر میکنم کسانی که وگان یا گیاهخوارهستن ویا رژیم غذایی خاصی را دنبال میکنن و یا حساسیت به گلوتن موجود در آرد گندم دارن حتمن این دانه رو میشناسن.

به دلایل زیادی من این نان رو دوست دارم:

نان سالمی هست

هضمش خیلی آسون و راحته

طعم جدیدی از نان هست که ارزش امتحان کردن داره

واقعن نان خوشمزه هست که میشه هر دفعه که پخت می‌کنید طعم تازه‌ و جدیدی رو امتحان کنید. شاید بپرسید چطوری؟ خوب می تونید هر دفعه از طعم دهنده ها سبزیجات تازه یا خشک و ادویه های متفاوت استفاده کنید مثل: ادویه های تند و تیزادویه های ایتالیاییدانه کنجدرزماریپیازچه – شوید– گشنیز- جعفری – پودر سیر یا پیاززیرهزردچوبه و نان کینوا با طعم متفاوت از دفعه قبل داشته باشید.

حتی میشه از نان تهیه شده بجای خمیر پیتزا برای درست کردن پیتزا استفاده کرد.به تنهایی هم طعم خیلی خوشمزه ا دارد و همراه با سوپ هم عالی میشه.

برای همین هم هست که نان کینوا واقعن نان فوق‌العاده‌ای هست برای همه.

مواد لازم

یک پیمانه دانه کینوا

یک و یک چهارم پیمانه آب سرد

مواد طعم دهنده

نصف ق چ پودر سیر

نصف ق چ نمک

نصف ق چ پودر فلفل قرمز

نصف ق چ ریحان خشک

مقداری گشنیز یا جعفری خرد شده یا مقداری برگ رزمای ( یا اکلیل کوهی) ریز خرد شده

کمی پیازچه خرد شده

طرز تهیه

فر را روی 218 درجه سانتیگراد گرم کنید.

دانه‌های کینوا را با آب و نمک – فلفلریحان و پودر سیر مخلوط کنید و با استفاده از بلندر به صورت خمیر روانی در آورید. در این مرحله رزماری و پیازچه خرد شده را هم افزوده و مواد را هم بزنید تا خوب با هم مخلوط شوند.

داخل سینی یا قالب را کمی روغنی کرده و یا کاغذ روغنی کف ظرف قرار دهده و مایه آماده شده را داخل ظرف ریخته و باقاشق آن را کاملن در سطح ظرف پخش کنید.

قالب را داخل فر گذاشته تا برای 20-15 دقیقه پخته و طلایی رنگ شود.

وقتی نان‌ها پختند بگذارید کمی خنک شده و از قالب خارج کنید.
