Chinese Beef Chow Mein

This tasty dish is popular in China. Chow meaning fried and mein meaning noodles. It’s a sort of stir fried dish consisting noodles, meat ( might be chicken, beef, shrimp) with vegetables such as onion, bell peppers, ….

Ingredients

  • 100g beef, cut into think strips
  • 200 g dried egg noodles
  • 1 small yellow-orange bell peppers, cut into thin strips
  • 1 small fresh root ginger, grated
  • 2 cloves garlic, grated
  • 1 large onion, peeled and cut into thin strips
  • 2 spring onions, chopped
  • 50 g broccoli, sliced
  • to taste Salt- chilli flakes
  • 1 tbsp corn flour
  • 3 tbsp sesame oil
  • 1 tsp sugar
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 4 tbsp sun flower oil

How to prepare it?????

Combine chopped beef with 1tbs of the sesame oil, corn flour, chilli flakes and salt. Mix well and leave to marinate for 20 minutes.

In a bowl, mix soy sauce with sugar and 1tbsp of the sesame oil. Set aside.

Chop vegetables. Heat a wok over a high heat. Add oil and once oil is very hot add vegetables, grated garlic and ginger..Stir -fry for 2 minutes.

Then add prepared sauce to the fried vegetables. Gently combine together and transfer to a plate.

Reheat the wok. Add oil and when oil is very hot add beef slices. Stir-fry for 3 minutes.

Add fired vegetables to the wok with fried beef. Mix all together.

Cook the noodles in a pan of boiling water for 6-8 minutes. Then drain them.And fry in 1tbsp of the sesame oil for 3 minutes and set aside.

Add the noodles to the beef mixture, stir-fry for 3 minutes and toss the mixture. Put on a plate garnish with chopped spring onions and serve it.

بیف چومین

چومین یک غذای بسیار لذیذ و محبوب درآشپزی چینی می باشد. چو به معنی سرخ شده و مین یعنی نودل یا رشته فرنگی .چومین نوعی غذای سرخ کردنیه . یعنی تا زمان سرخ شدن و پخته شدن غذا آن را باید مرتب با قاشق هم بزنید . چومین شامل نودل ( رشته فرنگی ) – گوشت : گوساله – مرغمیگوو سبزیجات مختلفی مثل پیازفلفل دلمه – …. است. امروز من بیف چومین یا چومین با گوشت گوساله درست کردم. خیلی آسونه و اگر مهمانی دارید می تونید مهمانهای خودتون رو با یک غذای خیلی خوشمزه چینی سورپرایز کنید غذایی که خیلی سریع آماده میشه و گرون هم نیست. /

مواد لازم

دویست گرم گوشت گوساله نواری خردشده

دویست و پنچاه گرم نودل

فلفل دلمه رنگی به صورت طولی و باریک خرد شده

دو سه پیازچه خرد شده

دو حبه سیر رنده شده

یک تکه زنجبیل تازه رنده ش ده

یک پیاز درشت پوست گرفته و خلالی خرد شده

پنچاه گرم کلم بروکلی

یک ق غ آرد

سه ق غ روغن کنجد

یک ق غ شکرسفید

یک ق غ سرکه

یک ق غ سویا سس

چهار ق غ روغن مایع

نمک و فلفل خشک به میزان لازم

طرز تهیه

گوشت خرد شده را با یک ق غ روغن کنجدآردنمک و فلفل با دست مخلوط کنید و بگذارید برای 20 دقیقه بماند.

داخل یک‌کاسه سویا سس را با شکر و یک ق غ روغن کنجد مخلوط کرده و کنار بگذارید.

سبزیجات را خرد کنید. روغن مایع را داخل وک و با حرارت بالا داغ کنید( به یاد داشته باشید این نوع غذای چینی در حرارت بالا پخته میشودو برای همین مرتب باید مواد داخل تابه را هم بزنید). حالا همه سبزیجات خرد شده را همراه با سیر و زنجبیل رنده شده داخل تابه ریخته و برای4-3 ه دقیقه در حالیکه هم می‌زنید آنهارا سرخ کنید.

سپس سویا سس آماده شده روی سبزیجات ریخته و به آرامی همه ی مواد را با هم مخلوط کنید و بعد سبزیجات به یک ظرف دیگر منتقل کنید.

حالامجددن روغن را در وک داع کنید و گوشت خرد شده را برای سه دقیقه سرخ کنید و یادتان نرود که مرتب هم بزنید. گوشت ها را بایدبرش نازک دهید تا به راحتی و به سرعت سرخ شوند. وقتی گوشت سرخ شد سبزیجات سرخ شده را روی گوشت ریخته و باهم مخلوط کنید.

مقداری آب را با یک ق چ نمک به جوش آورید و رشته‌ها را داخل آب بریزید تا برای 8-6 دقیقه بپزد. وقتی پخت رشته‌ها را داخل آبکش ریخته و آب سرد شیر را روی آن باز کنید. حالا رشته هارا با یک ق غ روغن کنجد برای سه دقیقه سرخ کنید.

رشته سرخ شده را روی سبزیجات ریختهکمی نمک و فلفل افزوده و برای سه دقیقه دیگر همه مواد را روی حرارت بالا سرخ کنید و هم بزنید.

حالا بیف چومین آماده هست: در ظرف مورد نظر کشیده و روی آن مقداری پیازچه خرد شده بریزید. نوش جان
