Persian Love Cake کیک عشق

Valentine’s day روز ولنتاین is a celebration of romance and love in many countries around the world including Iran. Valentine’s day is a Western festival but perhaps you may know, in Iran we celebrate it twice. Yes you heard right. The first one is on the 14th Feb and second one is on the 24th Feb.

Iranian day of Love, which is called (Sepandarmazgaan سپندارمذگان), is on the 24th Feb,and dating back to the Achaemenid Empire امپراطوری هخامنشی the first Iranian Empire (550-330 B.C.). So in ancient time, It was a special feast of the women and girls. Men used to make them presents, all women and girls were treated as queens and whatever they wished, would be done by their men. –

So I have prepared a delicious treat for this special day. The following recipe is called, Persian Love Cake کیک عشق ایرانی and do you know why it is called that?? In the legends from many antiquity, a young woman was in love with a Persian prince and she decided to make a cake with love and aromatic spices such as cardamom, nutmeg, rose water, orange juice, ….to his prince.

I am 100 % sure that prince enjoyed the cake. This is a moist and  incredibly delicious cake. I mean veryyyyyyyy delicious. I just hope you give a try to this cake.

Oh I should tell you about two things too: one thing is about rose water in this cake, I believe some of you do not like rose water and you think if you add it to your dessert or food it would be perfumey but actually it is not like that and a decent amount of rose water will give wonderful taste to your recipe.

Secondly , if you still do not like rose water, you can use orange blossom instead. Both equally give an amazing taste to the cake.

Ingredients

  • 2 cups almond flour
  • 1 ½ cups plain flour
  • 1 cup plain yogurt
  • 2 whole eggs
  • 120g unsalted butter
  • Zest of lemon or lime
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 1tbsp baking powder
  • 1 ½ tsp cardamom powder
  • ½ tsp nutmeg powder
  • handful flake almonds or silvered pistachios

Ingredients for syrup

  • 1 large orange juice
  • 1/3 cup honey
  • 1tsp orange blossom (Bahar narenj) or rosewater

Method

preheat the oven at 180C degree.

Mix butter with brown and white sugar with an electric mixer. Then add two eggs and beat for a minute. Add lemon zest and yogurt to the mixture and beat until all ingredients incorporated..

in a separate bowl, add almond flour and plain flour, nutmeg, baking powder and cardamom. Stir them. Pour dry ingredients into the above mentioned batter. Mix with electric mixer all together.

Grease sides of a cake tin, and cover the base of the tin with parchment paper. Pour the mixture into the cake tin and scatter over almond flakes or chopped pistachio. Place it into preheated oven and bake for about 55-60 minutes. Insert a skewer or a knife into the cake, if comes out clean, it means cake is baked.

Meanwhile, prepare the syrup a few minutes before the cake is ready: Add honey, orange juice and rose water or orange blossom to a saucepan. Bring it to a boil and simmer for 5 minutes. Set aside.

Place the cake on a tray. While the cake is hot, use a wooden skewer and Poke several small holes on the cake and pour warm syrup all over the cake. Allow to soak for an hour and them remove from the cake tin. Cut the cake and serve it with Greek yogurt ( yes that’s right with yogurt) , taste is just perfect.

در کشورهای اروپایی و آمریکا ولنتاین رو نمادی برای عشق می دوننکه در روز 14 فوریه اون رو جشن میگیرن . در ایران هم ولنتاین برگزار میشه ولی ما ایرانیها هم برای خودمون روز عشق داریم.

از چند هزار سال پیش در ایران باستان روز عشق یا سپندارمذگان در پنجمین روز ماه اسفند جشن و پایکوبی میشد. روزی که مردان زنان و دختران را هدیه میدادندزنان را مانند ملکه احترام و عزت میگذاشتند و از اوامر زنان اطاعت میکردند.

به هر حال چه ولنتاین چه سپندارمذگان همگی زیبا هستن چرا که عشق و مَحبت به همدیگر یه موهبت گرانبهاست.برای روز سپندارمذگان (#روز _عشق ایرانی ) و ولنتاین چند نوع دسر تهیه کردم که دونه دونه به اشتراک میگذارم و امیدوارم خوشتون بیاد

در پست امروز و چند پست بعدی طرز تهیه چند شیرینی رو برای روز عشق به اشتراک میگذارم. اولین پستم : کیک عشق ایرانی هست . میدونید برای چی این اسم روی کیک هست؟؟ گفته شده که یک زن جوان عاشق یک شاهزاده پارسی شده بود و برای اینکه دل این شاهزاده رو بدست بیاره این کیک رو برای او درست کرد.

باور کنید این کیک اینقدرررررررر خوشمزه و مطلوب هست که یک چیزی میگم یک چیزی میخونید و تا امتحان نکنید متوجه نمیشید چه کیکی هست. این کیک از ترکیب آرد بادام با ماستآب پرتقالجوز هندیهل وگلاب یا بهار نارنج …. درست شده. طعم کم نظیری داره .

نکته‌ای که در مورد این کیک باید بگم این هست که بعضی‌ها از گلاب خوششون نمیاد و فکر میکنن اگر گلاب رو به غذا یا شیرینی بزنن طعم عِطر مانند میگیره ولی اصلن اینجور نیست واگر مقدار معقول استفاده کنید طعم بسیار خوش آیندی رو خواهید داشت. من این کیک رو هم با گلاب درست کردم و هم با بهار نارنج و باید بگم با هردو عالیییییی شده. پس اگر گلاب دوست ندارید از بهارنارنج استفاده کنید و ببینید چه کیکی هست این کیک عشق ایرانی.

مواد لازم

دو پیمانه آرد بادام

یک و یک دوم پیمانه آرد معمولی

یک پیمانه ماست

دو عدد تخم مرغ

صدوبیست گرم کره بدون نمک

پوست رنده شده یک لیمو ترش

سه چهارم پیمانه شکر سفید

سه چهارم پیمانه شکر قهوه ای

یک ق غ بیکینگ پودر

یک و یک دوم ق چ پودر هل Cardamom

نصف ق چ پودر جوز هندی Nutmeg

دو ق غ پسته یا بادام خرد شده

مواد لازم برای شربت

آب یک پرتقال

یک سوم پیمانه عسل

یک ق چ بهار نارنج یا گلاب

طرز تهیه

اجاق را روی حرارت ۱۸۰ درجه سانتیگراد گرم کنید.

داخل یک‌کاسه کره – شکر قهوه ای و سفید را با مخلوط برقی هم بزنید. سپس تخم مرغ ها را افزوده و باز هم بزنید. در انتها پوست لیمو ترش رنده شده و ماست را اضافه کرده و همه ی مواد را با هم مخلوط کنید تا یک مایه یک‌دست شود.

داخل یک ظرف جدا آرد بادامآرد معمولی – بکینگ پودجوز هندی و هل را با هم مخلوط کرده و بعد روی مایه آماده شده ریخته و با مخلوط کن همه ی مواد را با هم همزده و ترکیب کنید.

کف قالب کیک را کاغذ آشپزی گذاشته و دیواره های قالب را هم چرب کنید. مایه کیک را داخل قالب بریزید و بادام یا پسته خرد شده را هم دور لبه ی کیک پخش کنید و در فر از قبل گرم شده قرار داده و اجازه دهید به مدت ۶۰۵۵ دقیقه پخته شود.

تا آماده شدن کیک شربت را آماده میکنیم: داخل یک قابلمه کوچک آب پرتقالعسل و بهار نارنج یا گلاب ریخته و بگذارید عسل آب شود. وقتی بجوش آمد حرارت را کم کنید و بگذارید برای ۳۲ دقیقه روی حرارت پایین بماند.

وقتی کیک پخت از فر خارج کرده و در حالیکه هنوز داغ است با یک وسیله تیز چند سوراخ روی کیک ایجاد کنید و شربت گرم را روی کیک بریزید.

بگذارید کیک برای یکساعت بماند تا شربت بخورد کیک برود. زمان سرو می‌توانید با مقداری ماست بله درسته ماست سرو کنید .
