Shirini Latifeh (Latifeh Pastry)شیرینی لطیفه

Latifehلطیفه is name for an Iranian pastry. It’s so verrrry much delicious and just special pastry. Latifeh means very soft, light, silky and just delightful. Ardebil اردبیل and Tabriz تبریز in NW of Iran are well know for making Latifeh pastry.Also latifehلطیفه might be a name for girls.

This pastry includes two pieces of pastry filled with whipped cream and coated with chopped pistachio.

Latifeh is a popular Persian pastry, especially in Nowruz (Persian New Year) and you can find it in any pastry shop. If you have one of this gorgeous pastry, you want to eat more and more.

Ingredients

  • 1 cup all purpose flour , 2 times sifted
  • 100g white sugar
  • 4 eggs
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • Ingredients for Cream
  • 1 cup whipping cream
  • 1tsp orange zest or vanilla extract
  • 2tbsp powdered sugar
  • 3tbsp ground pistachio

Method

Preheat the oven at 175C degree. Line a baking sheet with parchment paper. and set aside.Separate egg whites and yolks. In a bowl, mix 50g of sugar with egg yolk. Beat until mixed and turned into pale colour and creamy. Then add vanilla and keep whisking. Set aside.

In another bowl, combine next 50g of sugar with egg whites and whisk until soft peaks form. Add pinch of salt and gradually add sugar and keep beating until stiff peaks form. Set aside.

This step is important: slowly fold egg yolk mixture to the egg white ( use a  spoon and do not beat with electronic mixer). 

Mix flour with baking powder and sift it 2 times.Now use a spatula or wooden spoon and slowly fold the sifted flour into the egg mixture.

Transfer the batter into a pastry bag and pipe the batter onto the parchment paper. Sprinkle powdered sugar on  the batter, therefore, It will cause fine cracks on the pastry. Place the baking tray into the oven and  bake the cookies for 8 minutes. Once all are baked, allow to cool and then easily remove cookies.

Meanwhile, prepare the cream: combine heavy whipping ream, powdered sugar, orange zest, Use an electric mixer and beat the mixture until stiff peaks form.

Remove cookies and allow to cool down. Fill a pastry bag with with cream and cove one cookie with cream and place other cookie on top of the cream. Sprinkle chopped or ground pistachios on the cream. Dust with icing sugar or powdered sugar.

شیرینی لطیفه

یکی از شیرینی‌های بسیاررررررررر خوشمزه خامه ای شیرینی لطیفه هست که هم طعمش هم شکلش مثل اسمش لطیف و قشنگه. درست کردن شیرینی لطیفه برعکس اسم قشنگش با اینکه سخت نیست ولی دقت بیشتر از معمول نیاز داره و زمان بر هست. این شیرین مثل ساندویج از دو تکه کیک مانند سبک و خامه فرم گرفته تشکیل میشه و روی خامه با پسته خرد شده تزیین میشه. خیلی خوشمزه هست و حتمن خودتون بهتر از من میدونید اگر آدم یکی از این لطیفه ها رو بخوره دیگه رژیم و مژیم از یاد میره .

اردبیل و تبریز برای داشتن شیرینی لطیفه بسیار معروف هستند. یکی از شیرینی‌هایی که در موقعیت ها و مراسم خاص و ایام نوروز پر طرفداره همین شیرینی خامه ای لطیفه است.

نام لطیفه یکی از نامهایی هست که بعضی از خانواده ها برای نامگذاری دخترشان انتخاب میکنند.

مواد لازم

یک پیمانه آرد – دو بار الک شده

صد گرم شکر سفید

چهار عدد تخم مرغ

نصف ق چ عصاره وانییل

نصف ق چ بیکینگ پودر

کمی نمک

مواد لازم برای خامه

یک پیمانه ویپینگ کریم

یک ق چ پوست پرتقال رنده شده

دو ق غ پودر قند

سه ق غ پودر پسته

طرز تهیه

فر را روی حرارت 175 درجه سانتیگراد از قبل گرم نگه دارید.

روی سینی شیرینی پزی را با کاغذ روغنی آشپزی بپوشانید. سینی را کنار بگذارید تازمان استفاده کردن.

سفید و زرده ها را از هم جدا کنید.پنجاه گرم از شکر را با زرده ها هم بزنید تا زمانیکه خوب با هم مخلوط شوند و کرم رنگ گردد. سپس وانیل را اضافه کرده – هم بزنیدو کنار بگذارید.

داخل یک‌کاسه دیگر پنجاه گرم بعدی از شکر را کم کم به سفیده ها اضافه کرده و هم بزنید تا کف کند( اگر شکر را یکمرتیه اضافه کنید ممکن است سفید ها آب بیاندازد.). حالا کمی نمک اضافه کرده و اینقدر هم بزنید تا سفیده ها کاملن سفت شود.

در این مرحله زرده ها را به سفیده افزوده و با یک قاشق چوبی یا پلاستیکی به آرامی و در یک جهت هم بزنید.

آرد و بیکینگ پودر را مخلوط و دوبار الک کنید.

حالا آرد را کم کم روی مخلوط تخم مرغ ریخته و با قاشق به آرامی مواد را با هم مخلوط کنید تا کاملن یک‌دست شود.مایه آماده شده را داخل قیف بریزید و روی سینی فر و با فاصله از هم دایره های متوسط بزنید.

مقداری پودر قند روی شیرینی‌ها الک کنید . این کار باعث می‌شود تا سطح شیرینی‌ها حالت ترک خوردگی ظریفی داشته باشند

سینی را داخل فر قرار داده تا برای 10-8 دقیقه بپزند. بعد از پخت سینی را از فر خارج کرده و بگذارید خنک شوند. وقتی خنگ شدند به راحتی از کاغذ جدا شده آماده مرحله بعدی هستند

برای تهیه خامه نیز می توانید ویپینگ کریم را با پودر قند و پوست پرتقال رنده شده مخلوط کرده و هم بزنید تا فرم بگیرید. خامه را داخل قیف ریخته و روی شیرینی مقداری خامه بریزید و شیرینی بعدی را روی خامه قرار دهید و خامه را با پودر پسته تزیین کنید.
