One of my favourite soups is tomato soup with sweet-sour taste. It might be served cold or hot. You can make a comfort-homemade tomato soup in less than an hour.

Ingredients
- 6 medium fresh tomato
- 400 gr canned tomatoes
- 1 stalk of celery
- 1 carrot, peeled and sliced
- 1 large onion, peeled and chopped
- 2 cloves of garlic, peeled and grated
- Handful fresh mint / basil
- 2 vegetable stock cubes
- 3 tbs sugar
- 2 tbs vinegar
- 1 tsp red/black pepper
- Olive oil

Preparation
Peel off onion and garlic. slice them. Peel and cut into small pieces the carrot. Slice the celery. Heat a pan over medium heat and add some olive oil. Then, add chopped vegetables and cook it for about 10 minutes. Set aside.

pour some water in a pot. Bring it to boil. Add fresh tomatoes and let it to cook for 10 minutes. Then drain and rinse it under tap water. Now you can peel cooked tomatoes off and cut them into half. Set aside.

Put a pot on a medium heat. Add 900 ml water. Bring it to boil. Add vegetable stocks. Stir until stocks are dissolved. Then, add canned tomatoes, fresh tomatoes, all spices, oil, vinegar, mints and fried vegetables. Allow to cook on a medium heat for 15 minutes. Once your soup is cooked, puree it in a food processor or blender.
Serve it hot. Top up your soup with your favourite herbs or bread. I have croutons and chopped mint here.

Over the years, I have experimented and learned more recipes. Some of my recipes are a fusion Western and Middle Eastern cuisine. Some are forgotten from Persian cooking tables and I try with posting and sharing those ones, to preserve them.
