‌ ‌‌Chickpea Flour Halwa حلوا/برشتوک آرد نخودچی

Halwa/halva /حلوا is flour based dessert. It is a  popular and traditional sweet dish in Iran, Turkey, Azerbaijan, India, Arabic countries around Persian Gulf خلیج فارس,and Eastern Europe countries.

Halwa usually served in religious occasions such as month of Ramadan. Halwa is an Arabic word and means sweet. There are loads of different recipes for preparing hlava. Halva is a flour based sweet :such as wheat flour, chickpea flour,  rice flour, cornstarch, and also fruits and nuts. Chickpea flour with saffron, cardamom and cinnamon create a delicious halwa.

Ingredients

  • 300g chickpeas flour
  • 150g powdered sugar
  • 150g Ghee or butter
  • 1tbsp saffron water
  • 1/3 tsp green cardamom powder
  • 1/3 tsp cinnamon powder
  • ½ cup mixture of nuts or seeds, coarsely chopped

How to make it?????

Mix chickpeas flour with cardamom and cinnamon powder. Heat a dry pan (without any ghee/ butter in it) over a medium to low heat and add the flour. Keep stirring the flour until smell sautéed flour and its evenly roasted.

Use a colander and sieve the sautéed flour. Make sure there is no lump.

Melt the ghee/butter on a medium to low heat and add the sauted flour. Keep stirring until the flour take all melted ghee to itself.

Next, add saffron water and combine all ingredients. Now, turn off the heat and add powdered sugar to the sautéed flour. Combine all ingredients well until fully mixed.

Place the  sauted  flour on a dish lined with parchment paper. Spread the suated flour in the dish.  With a spoon or masher press the halwa down.

Now you have several choices for garnishing the halwa:

  • This halwa looks amazing with sprinkling of nuts toppings like pistachios, or almonds
  • coat top of halwa with melted chocolate
  • sprinkle dried fruits or chocolate chips. Then cover It with another piece of parchment paper and Let it cool for 2-3 hours. Then, halwa will become firm as it cools down and then cut it into pieces. I promise you would love it if taste it.

It is going well with a cupa tea or coffee.

برشتوک آرد نخود چی

حلوا- برشتوک نوعی شیرینی پرطرفدار در ایران – ترکیهآذربایجانکشورهای عربی و کشورهای اروپای شرقی هست که انواع مختلفی داره. حلوا یک کلمه عربی به معنای شیرین هست. این شیرینی خوشمزه معمولن در موقعیت ها و مراسم مذهبی و سوگواری تهیه میشه.

حلوا معمولن از ترکیب انواع آرد مثل آرد گندم – آرد برنج – آرد ذرت – آرد نخود- با مواد مختلفی مثل گردو – هویج- سیب – کنجد…. و ادویه های خوش عِطر درست میشه.

مواد لازم

سیصد گرم آرد نخود

صدوپنجاه گرم پودر قند

صدوپنجاه گرم روغن جامد یا روغن محلی

یک ق غ زعفران دم کرده

یک سوم ق مرباخوری پودر هل سبز

یک سوم ق مرباخوری پودر دارچین

نصف پیمانه مخلوط آجیل مثل گردوبادامپستهفندق

طرز تهیه

آرد نخودچی را با هل و دارچین مخلوط کنید. یک تابه ی خشک و بدون روغن را روی حرارت متوسط رو به پایین بگذارید . آرد را داخل تابه ریخته و مرتب هم بزنید تا تفت داده بشه و بوی خامی آرد برود ووقتی عِطر ارد تفت داده به مشام رسید از روی حرارت بردارید. آرد تفت داده را از الک رد کنید تا کاملن به صورت پودر یک‌دست در آید.

درمرحله بعدیروغن محلی یا روغن جامد را داخل تابه ریخته و روی حرارت متوسط رو به پایین روغن را آب کنید. آرد تفت داده را داخل روغن ریخته و مرتب هم بزنید تا روغن به خورد آرد برود.چون آرد قبلن تفت داده شده خیلی سریع روغن را بخود جذب میکنید.

در این مرحله زعفران دم کشیده را روی آرد ریخته و باز هم بزنید تا با هم مخلوط شوند. حالا تابه را از روی حرارت برداشته و پودر قند را به آرد اضافه کنید و مرتب هم بزنید تا همه ی مواد با هم خوب مخلوط شوند.

حالا می‌بینید که حلوا به صورت تکه‌تکه و خرد شده هست ولی نگران نباشید. داخل یک ظرف را با کاغذ روغنی آشپز بپوشانید . حلوا را روی کاغذ پخش کنید و با یک گوشت کوب روی حلوا فشار دهید . می‌بینید که حلوا کاملن به صورت منسجم و یک شکل در میاید.

برای روی حلوا می توانید:

از آجیل ها و تخمه های خرد شده روی حلوا پخش کنید

و یا شکلات سفید یا قهوه ای را آب کرده و روی حلوا بریزید

و یا اینکه از تکه‌های شکلات خرد شده ویا میوه‌های خشک خرد شده روی حلوا بریزید.

سپس روی حلوا هم یک ورقه کاغذ روغنی آشپزی قرار داده و حلوا را در یخچال بگذارید تا خنک شده و خودش را بگیرد.

وقتی سرد شد حلوا بافت سفتی خواهد داشت و میتوانید آن را به تکه‌های کوچک برش دهید/

این حلوای خوشمزه همراه با یک فنجان چای یا قهوه قوق العاده هست.

3- sprinkle dried fruits or chocolate chips. Allow to cool and then cut it into pieces.

It is going well with a cupa tea or coffee.
